  • oz egg white, optional
  • Ice cubes
  • Lemon zest, for garnish, optional

  • Small Tumbler Glass
  • Stirrer or Bar Spoon
  • Strainer
  • Measuring Jigger

Instructions

  • Fill your shaker with ice cubes.
  • Seal the shaker and shake vigorously the mixture.
  • Strain the mixture into your chilled small tumbler glass, filled with fresh ice cubes.
  • Garnish with lemon zest and white grapes.

Notes

Substitutes:

  • Grappa: If you don't have Grappa, you can use vodka as a neutral spirit base, though it will lack a distinctive flavor.
  • Honey Mix: If honey isn't your thing, use simple syrup or agave nectar for a twist.
  • Chamomile Cordial: No chamomile cordial? Use chamomile tea to get a similar flavor profile or get creative with any tea you have available.
  • Egg White: If you're allergic or dislike egg white, leave it out or use aquafaba for a vegan option that still gives that frothy texture.

Making a Pitcher of VE.N.TO:

  • Scale up the ingredients proportionally to the number of servings you need. For 8 servings, use 360 ml grappa, 180 ml lemon juice, 120 ml honey mix, 120 ml chamomile cordial, and 80 ml egg white.
  • Combine all the ingredients in a large pitcher and stir well.
  • Serve in individual ice-filled small tumbler glasses, garnished accordingly.

Making it Non-Alcoholic:

  • Grappa Substitute: Use a non-alcoholic spirit that has a botanical profile, or simply use more chamomile cordial to replace the Grappa.
  • Proceed with the rest of the recipe as usual, omitting the alcohol.

Making it Vegan:

  • Egg White Substitute: Use aquafaba (the liquid from a can of chickpeas) as a one-to-one substitute for egg white to create a frothy texture without using animal products.
  • Ensure the honey mix is vegan-friendly; some vegans do not consume honey so you could use agave syrup or simple sugar syrup as a substitute.

Can I use Gin instead of Grappa for a VE.N.TO Drink?

Using gin instead of Grappa in a VE.N.TO cocktail significantly changes the flavor profile. Gin brings its botanical notes, which can add a complex, aromatic dimension to the drink, contrasting with Grappa’s smoother, grape-based character. Grappa’s subtle fruitiness and warmth often serve as a backdrop for the other ingredients, while gin might push the cocktail in a more herbaceous direction. This switch would create a cocktail that respects the original’s spirit but introduces a distinctly different character.

Is the VE.N.TO listed as an IBA cocktail?

The VE.N.TO is listed as an IBA (International Bartenders Association) cocktail, a testament to its unique character and growing popularity. This recognition places the VE.N.TO among the ranks of time-honored classics and modern favorites curated by the IBA to represent the gold standard in mixology. Including the IBA list means that the VE.N.TO not only boasts a harmonious blend of Grappa, lemon juice, honey mix, and chamomile cordial but also meets the exacting standards of the world’s leading bartending authority. It’s a nod to the cocktail’s balanced flavor and embodiment of contemporary cocktail craftsmanship, ensuring that bartenders around the globe can replicate this Italian-inspired creation with precision and flair.

History and Origin of the VE.N.TO

Unlike classic cocktails whose stories have been told and retold, the VE.N.TO is more a contemporary creation, emerging from the modern Italian cocktail scene. Invented by Samuele Ambrosi from GrappaRevolution and Leonardo Varesi from the Riva Bar, it showcases ingredients that are quintessentially Italian, like Grappa, whose roots are deeply embedded in Italy’s rich tradition of distilling and cocktail craftsmanship. The name, the Italian word for “wind,” implies that the drink is refreshing with a taste as gentle as a breeze. Including modern elements like chamomile cordial and honey, the mix shows that the VE.N.TO is a product of current mixology trends, marrying traditional spirits with innovative flavors. As it stands, the VE.N.TO is making its way into the global cocktail repertoire, carried by its unique blend of flavors and its embodiment of contemporary Italian elegance.
