Ingredients
 

  • oz White Smooth Grappa
  • ¾ oz fresh lemon juice
  • ½ oz honey mix - honey diluted with chamomile infusion instead of water
  • ½ oz chamomile Cordial
  • oz egg white - optional
  • Ice cubes
  • Lemon zest - for garnish, optional
  • White grapes - for garnish, optional

Equipment

  • Shaker
  • Small Tumbler Glass
  • Stirrer or Bar Spoon
  • Strainer
  • Measuring Jigger

Instructions

  • Start by stirring some ice cubes in your tumbler glass to chill it.
  • Add ⅓ oz egg white (if using), ½ oz chamomile Cordial, ½ oz honey mix, ¾ oz fresh lemon juice, and 1½ oz White Smooth Grappa into the shaker.
  • Fill your shaker with ice cubes.
  • Seal the shaker and shake vigorously the mixture.
  • Strain the mixture into your chilled small tumbler glass, filled with fresh ice cubes.
  • Garnish with lemon zest and white grapes.

Notes

Substitutes:

  • Grappa: If you don't have Grappa, you can use vodka as a neutral spirit base, though it will lack a distinctive flavor.
  • Honey Mix: If honey isn't your thing, use simple syrup or agave nectar for a twist.  
  • Chamomile Cordial: No chamomile cordial? Use chamomile tea to get a similar flavor profile or get creative with any tea you have available.
  • Egg White: If you're allergic or dislike egg white, leave it out or use aquafaba for a vegan option that still gives that frothy texture.

Making a Pitcher of VE.N.TO:

  • Scale up the ingredients proportionally to the number of servings you need. For 8 servings, use 360 ml grappa, 180 ml lemon juice, 120 ml honey mix, 120 ml chamomile cordial, and 80 ml egg white.
  • Combine all the ingredients in a large pitcher and stir well.
  • Serve in individual ice-filled small tumbler glasses, garnished accordingly.

Making it Non-Alcoholic:

  • Grappa Substitute: Use a non-alcoholic spirit that has a botanical profile, or simply use more chamomile cordial to replace the Grappa.
  • Proceed with the rest of the recipe as usual, omitting the alcohol.

Making it Vegan:

  • Egg White Substitute: Use aquafaba (the liquid from a can of chickpeas) as a one-to-one substitute for egg white to create a frothy texture without using animal products.
  • Ensure the honey mix is vegan-friendly; some vegans do not consume honey so you could use agave syrup or simple sugar syrup as a substitute.
