Notes

Substitutes:

  • Overproof aged rum: If you don't have overproof rum, you can use dark or spiced rum as a substitute. Both will give a different flavor profile but still work well in this cocktail.
  • Apple Juice: Pear juice or white grape juice can be used instead of apple juice for a slightly different fruit flavor.
  • Simple Syrup: If you're out of simple syrup, you can make your own by dissolving equal parts sugar and water over low heat then cooling it down before use.
  • Angostura Bitters: opt for orange bitters, it will deliver a citrusy note to the mix.

Making a Pitcher of Treacle Drink:

  • To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of dark rum, 4 oz of apple juice, 16 dashes of angostura bitters,  and 2 oz of simple syrup.
  • In a large pitcher, combine the rum, the bitters, and simple syrup with ice cubes. Stir well.
  • Strain the mixture into ice-filled Old Fashioned glasses, add a float of apple juice to each of them, garnish with an apple slice, and serve immediately.

Making it Non-Alcoholic:

  • Rum Substitute: Use a non-alcoholic rum substitute; these are available and reasonably mimic rum's flavor.
  • Angostura Bitters: use a non-alcoholic infusion of herbs, spices and bittering agents like gentian root or cinchona bark.
  • Proceed As Usual: Use this non-alcoholic substitute instead of the regular dark rum, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

This cocktail is already vegan-friendly as it doesn't contain any animal products. However, always check your ingredients' labels to ensure they're suitable for vegans. Some brands of rum may use animal products in their production process.

What is a Treacle Drink?

A Treacle Drink is a rum-based cocktail of overproof aged rum, apple juice, simple syrup, and Angostura bitters. It’s easy to make as it only involves stirring some of the ingredients over ice and adding a float of apple juice at the end.

The Treacle Drink is an exciting variant of the Old Fashioned cocktail. Instead of whiskey, traditionally used in an Old Fashioned, this drink uses rum for its base spirit and adds apple juice for a unique twist.

One intriguing aspect of this drink is its name – ‘Treacle.’ This term refers to uncrystallized syrup left during sugar refining; hence, it perfectly describes this beverage’s rich sweetness. Despite being sweet, it is manageable due to the balance of Angostura bitters and apple juice tartness.

History and Origin of the Treacle Drink

The Treacle Drink cocktail has a fun story that starts in London in the late 20th century. A famous bartender named Dick Bradsell invented it. He was known for his creative and new cocktails, and the Treacle Drink is one of his best.

In his career, Bradsell bestowed prestige with his talent at many bars in London. This is where he first made the Treacle Drink. ‘Treacle’ is an old British word for syrup made from sugar, like molasses. This gives us a clue about what the drink tastes like.

Bradsell took the classic Old Fashioned cocktail and twisted it. Instead of using the usual ingredients, he tried dark rum and apple juice. The result was a sweet, strong cocktail with a hint of fruitiness that people loved.

To make the original Treacle Drink, you mix overproof aged rum, simple syrup, and Angostura bitters in a glass with ice and then add a float of apple juice. Often, you garnish the drink with an apple slice.

Over time, bartenders worldwide have changed the Treacle Drink a bit. Some use different kinds of rum or add more spices to make it more complex. But no matter how they change it, it still has the same sweet and strong taste that Bradsell first created.
