Savor fall flavors with this uncomplicated Treacle Drink recipe, combining overproof aged rum, apple juice, bitters and a dash of sugar syrup.

Ingredients
 

  • 2 oz Overproof aged Rum
  • ½ oz apple juice
  • ¼ oz simple syrup
  • 2 dashes of Angostura aromatic bitters
  • Ice cubes
  • Apple slice - for garnish, optional

Equipment

  • Old Fashioned Glass
  • Measuring Jigger
  • Stirrer or Bar Spoon

Instructions

  • Fill your Old Fashioned glass with ice cubes.
  • Add 2 dashes of Angostura aromatic bitters.
  • Add ¼ oz simple syrup to the mix.
  • Pour 2 oz Overproof aged Rum over the ice.
  • Use a bar spoon to stir the ingredients gently.
  • Measure and pour ½ oz apple juice into the glass using a bar spoon, you want to pour it slowly to make sure the apple juice floats on top of the drink.
  • Place an apple slice on the glass for garnish.

Notes

Substitutes:

  • Overproof aged rum: If you don't have overproof rum, you can use dark or spiced rum as a substitute. Both will give a different flavor profile but still work well in this cocktail.
  • Apple Juice: Pear juice or white grape juice can be used instead of apple juice for a slightly different fruit flavor.
  • Simple Syrup: If you're out of simple syrup, you can make your own by dissolving equal parts sugar and water over low heat then cooling it down before use.
  • Angostura Bitters: opt for orange bitters, it will deliver a citrusy note to the mix.

Making a Pitcher of Treacle Drink:

  • To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of dark rum, 4 oz of apple juice, 16 dashes of angostura bitters,  and 2 oz of simple syrup.
  • In a large pitcher, combine the rum, the bitters, and simple syrup with ice cubes. Stir well.
  • Strain the mixture into ice-filled Old Fashioned glasses, add a float of apple juice to each of them, garnish with an apple slice, and serve immediately.

Making it Non-Alcoholic:

  • Rum Substitute: Use a non-alcoholic rum substitute; these are available and reasonably mimic rum's flavor.
  • Angostura Bitters: use a non-alcoholic infusion of herbs, spices and bittering agents like gentian root or cinchona bark.
  • Proceed As Usual: Use this non-alcoholic substitute instead of the regular dark rum, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

This cocktail is already vegan-friendly as it doesn't contain any animal products. However, always check your ingredients' labels to ensure they're suitable for vegans. Some brands of rum may use animal products in their production process.
