Notes
Substitutes:
- Malibu Rum Liqueur: If you don't have Malibu liqueur, you can use any other coconut-flavored liqueur or rum or even plain white rum. You could also add a splash of coconut milk or cream to plain rum for that coconut flavor. If you’re feeling crafty, you can also make you own coconut-infused rum:
-
- Take a 70 cl bottle of white rum of your choice.
- In a pan, gently toast 10g of coconut flakes until fragrant (be careful not to burn them).
- Remove from heat and transfer the toasted coconut flakes into the rum bottle.
- Close the bottle, give it a shake, and leave it to rest in a cool and dark place for at least 2 weeks. You can leave it for as long as you want, just make sure to taste it regularly to control the taste and flavor intensity.
- If you want, you can also add some cane sugar to the bottle (this will give something that’s closer to a liqueur). Start with adding 50g of sugar to the 70cl of infused rum. Mix it well to dissolve the sugar, give it a taste, and adjust if you feel like more sugar is necessary.
- To use, simply pour the quantity you need from the bottle and filter it through a fine strainer.
- Pineapple Juice: If you're out of pineapple juice, orange, mango or even passion fruit juice can be substituted. They change the flavor profile but still pair well with the coconut.
Making a Pitcher of Malibu and Pineapple:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Malibu rum and 32 oz of pineapple juice.
- Mix: Combine the Malibu rum and pineapple juice in a large pitcher. Stir well.
- Serve: Pour the mixture into ice-filled highball glasses, garnish with a pineapple slice, and serve immediately.
Making it Non-Alcoholic:
- Malibu Rum Liqueur Substitute: Use a non-alcoholic coconut-flavored beverage or coconut water as a substitute for Malibu rum.
- Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
- Check Your Rum: Most rums, including Malibu, are typically vegan. However, always check the brand, as some rums may use animal products in their processing (especially if a filtration process is involved).
- Check Your Juice: Ensure your pineapple juice is 100% juice with no added sugars or preservatives that may not be vegan.
