Ingredients

  • 2 oz Malibu Rum
  • 4 oz pineapple juice, to top, adjusting to taste
  • Ice cubes
  • Pineapple slice, for garnish, optional

Instructions

  • Fill your highball glass with ice cubes.
  • Pour 2 oz Malibu Rum over the ice.
  • Top up with 4 oz pineapple juice (adjust to taste and to the size of the glass).
  • Stir to combine.
  • Place a pineapple slice on the rim of the glass for garnish.

Substitutes:

  • Malibu Rum Liqueur: If you don't have Malibu liqueur, you can use any other coconut-flavored liqueur or rum or even plain white rum. You could also add a splash of coconut milk or cream to plain rum for that coconut flavor. If you’re feeling crafty, you can also make you own coconut-infused rum:
    1. Take a 70 cl bottle of white rum of your choice.
    2. In a pan, gently toast 10g of coconut flakes until fragrant (be careful not to burn them).
    3. Remove from heat and transfer the toasted coconut flakes into the rum bottle.
    4. Close the bottle, give it a shake, and leave it to rest in a cool and dark place for at least 2 weeks. You can leave it for as long as you want, just make sure to taste it regularly to control the taste and flavor intensity.
    5. If you want, you can also add some cane sugar to the bottle (this will give something that’s closer to a liqueur). Start with adding 50g of sugar to the 70cl of infused rum. Mix it well to dissolve the sugar, give it a taste, and adjust if you feel like more sugar is necessary.
    6. To use, simply pour the quantity you need from the bottle and filter it through a fine strainer.
  • Pineapple Juice: If you're out of pineapple juice, orange, mango or even passion fruit juice can be substituted. They change the flavor profile but still pair well with the coconut.
