  • Prep Glass: Chill your coupe glass.
  • Muddle: In your shaker, muddle 2 cucumber slices.
  • Add Mint: Add 6-8 mint leaves into the shaker
  • Add Ingredients: Pour in ¾ oz simple syrup, 1 oz fresh lime juice, and 2 oz Gin.
  • Shake: Fill the shaker with ice and shake it well until well combined.
  • Strain: Fine strain the mixture into a chilled coupe glass.
  • Garnish: Garnish with a cucumber wheel or mint sprig if desired.

Substitutes:

  • Gin: If you're out of Gin, vodka is a great substitute that will allow the other flavors to shine through. For a more floral note, try using elderflower liqueur instead.

History and Origin of the Eastside Cocktail

George Delgado, a bartender at Libation in New York City’s Lower East Side, gets credit for creating the first Eastside. He took a gin-based mojito and added cucumber to give it a unique spin, in fact, its version was served as a long drink and was indeed topped with soda water.

The drink itself became really famous later on, when it was taken to Milk & Honey by Christy Pope and served in the current straight-up version.  This new drink quickly became a hit with customers who loved its fresh taste. Basically, it is a new interpretation of the original gimlet.

The Eastside Cocktail is now a favorite in bars worldwide. It’s crisp and refreshing, perfect for hot summer days or whenever you want something light and tasty.
