  • Prep Glass: Fill a Coupe glass with ice. Give it a quick stir and set it aside.
  • Add Juices: Pour ½ oz pineapple juice and ½ oz lime juice into the shaker.
  • Add Coconut Liqueur: Add ¼ oz Coconut Liqueur or Syrup.
  • Add Rum: Measure and pour 2 oz White Rum into the shaker as well.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Take the Coupe glass and discard the ice inside. Then, using both the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
  • Add Champagne: Top up the drink with approx. 1 oz Champagne (can be adjusted to taste).
  • Garnish: Garnish with a lime wheel and serve immediately.
