Refresh yourself this summer with the White Lotus Drink recipe! Blend white rum, pineapple juice, lime, coconut liqueur and a splash of champagne for a delicious drink.

- 2 oz White Rum - preferably Cuban style
- ½ oz pineapple juice
- ½ oz lime juice
- ¼ oz Coconut Liqueur or Syrup
- 1 oz Champagne
- Ice cubes
- Lime wheel - for garnish

Prep Glass: Fill a Coupe glass with ice. Give it a quick stir and set it aside.
Add Juices: Pour ½ oz pineapple juice and ½ oz lime juice into the shaker.
Add Coconut Liqueur: Add ¼ oz Coconut Liqueur or Syrup.
Add Rum: Measure and pour 2 oz White Rum into the shaker as well.
Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
Strain: Take the Coupe glass and discard the ice inside. Then, using both the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
Add Champagne: Top up the drink with approx. 1 oz Champagne (can be adjusted to taste).
Garnish: Garnish with a lime wheel and serve immediately.
Substitutes:
- White Rum: You can use dark, spiced or even flavored rum (such as coconut rum for example) for a different flavor profile. Feel free to experiment!
- Lime Juice: Freshly squeezed lime juice is ideal, but bottled lime juice can work if necessary. Another option is to use fresh lemon juice for a slightly different citrus kick.
- Coconut Liqueur/Syrup: If you can't find coconut liqueur, use coconut syrup or coconut cream. Another option would be to make a simple syrup using coconut sugar: simply mix together equal parts coconut sugar and water, stir to dissolve over low heat and let it cool down to room temperature before using.
- Champagne: Prosecco or any sparkling wine can replace Champagne if you want a more budget-friendly option; just make sure to choose a bottle that’s not too sweet (try to go for the “dry” or “brut” ones).
Making a Pitcher of White Lotus Drink:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of white rum, 4 oz of pineapple juice, 4 oz of fresh lime juice, 2 oz of coconut liqueur or syrup and approximately 8 oz of Champagne.
- Mix: In a large pitcher, combine all the ingredients except the Champagne (it will be used later to top up the drink). Add ice and stir well.
- Serve: Strain to remove the ice and pour into individual coupe glasses. Top up each glass with approximately 1 oz of chilled Champagne and garnish with a lime wheel right before serving. If you have some leftovers, be sure to keep it in the fridge (make sure no ice cubes are left inside) in an airtight container.
Making it Non-Alcoholic:
- White Rum Substitute: Use a non-alcoholic rum substitute; these are available and mimic the flavor quite well. If you’re feeling crafty, you can also make your own rum substitute by infusing together rooibos tea and a bunch of spices of your liking (vanilla, cinnamon, clove, allspice and banana are always a good way to start). Mix all the ingredients together, add hot water, cover and let it infuse for at least 3h (the stronger the better, so if you have time let it infuse overnight. In that case, you can either let it rest in the fridge once the liquid has cooled down). Give it a taste, adjust the spice level if necessary and strain it once you’re happy with the result. Stored properly (in an airtight container in the fridge), this “tea rum” can be kept for up to a week.
- Champagne Substitute: Opt for a non-alcoholic sparkling wine to keep the fizz without the alcohol.
- Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
The White Lotus cocktail does not contain any ingredient of animal origin, but you may want to check your champagne bottle: while most champagnes are vegan-friendly, some producers may use fining agents that aren't plant-based, such as isinglass (collagen from fish bladders) or casein (the protein found in milk and cheese). Once you’ve found a vegan-friendly Champagne you like, simply follow the original recipe and enjoy your drink!
