Notes

Substitutes:

  • Gin: If you don't have gin, try using vodka for a cleaner taste, though it will lack the botanical notes.
  • Applejack: I've used brandy as a substitute for applejack; it works well but gives a slightly different flavor profile.
  • Lemon Juice: Lime juice can be used instead of lemon juice in a pinch, though it will alter the taste slightly.
  • Grenadine: You can make homemade Grenadine by boiling pomegranate juice with sugar until it thickens.
  • Egg White: For those who prefer not to use raw egg whites, aquafaba (the liquid from canned chickpeas) works surprisingly well as a vegan alternative.

Making it Non-Alcoholic:

  • Gin Substitute: Use a non-alcoholic gin substitute; these are available and reasonably mimic gin's botanicals.
  • Applejack Substitute: Opt for apple cider or apple juice to replace applejack.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

  • Egg White Substitute: Use aquafaba (the liquid from canned chickpeas) instead of egg white; it creates a similar frothy texture without using animal products.
  • Proceed As Usual: Follow the original steps using aquafaba in place of egg white to make a vegan-friendly Cocktail.

History and Origin

The Pink Lady Cocktail dates back to the early 20th century. The first written reference of this cocktail is found in Jacques Straub’s 1913 Manual of Mixed Drinks where the egg white was not listed as an ingredient. Bartenders in the United States probably created this drink in honor of the American actress Hazel Dawn who played the popular Broadway musical called “The Pink Lady.”

The drink gained popularity among women due to its appealing pink color and smooth, frothy texture and it has always been a symbol of sophistication and elegance.
