Ingredients
 

  • oz Gin
  • ½ oz Applejack
  • ¾ oz fresh lemon juice
  • ½ oz grenadine
  • 1 egg - discard the yolk
  • Ice cubes
  • Cherry - for garnish, optional

Equipment

  • Cocktail Shaker
  • Measuring Jigger
  • Strainer & Fine-strainer
  • Coupe Glass

Instructions

  • Prep Glass: Chill your coupe glass.
  • Add Egg White: Crack 1 egg and add the egg white to the shaker.
  • Add Lemon Juice: Add ¾ oz fresh lemon juice.
  • Add Grenadine: Pour in ½ oz grenadine.
  • Add Applejack: Measure and pour ½ oz Applejack into the shaker.
  • Add Gin: Pour 1½ oz Gin into the shaker.
  • Shake Vigorously: Shake the mixture vigorously for about 15 seconds to create a frothy texture.
  • Prep Shaker: Fill your cocktail shaker with ice cubes.
  • Shake Again: Shake the mixture one more time for about 15 seconds.
  • Strain and Serve: Fine strain the mixture into a chilled coupe glass.
  • Garnish: Place a cherry on top for garnish.

Notes

Substitutes:

  • Gin: If you don't have gin, try using vodka for a cleaner taste, though it will lack the botanical notes.
  • Applejack: I've used brandy as a substitute for applejack; it works well but gives a slightly different flavor profile.
  • Lemon Juice: Lime juice can be used instead of lemon juice in a pinch, though it will alter the taste slightly.
  • Grenadine: You can make homemade Grenadine by boiling pomegranate juice with sugar until it thickens.
  • Egg White: For those who prefer not to use raw egg whites, aquafaba (the liquid from canned chickpeas) works surprisingly well as a vegan alternative.

Making it Non-Alcoholic:

  • Gin Substitute: Use a non-alcoholic gin substitute; these are available and reasonably mimic gin's botanicals.
  • Applejack Substitute: Opt for apple cider or apple juice to replace applejack.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

  • Egg White Substitute: Use aquafaba (the liquid from canned chickpeas) instead of egg white; it creates a similar frothy texture without using animal products.
  • Proceed As Usual: Follow the original steps using aquafaba in place of egg white to make a vegan-friendly Cocktail.
