Notes
Substitutes:
- Gin: If you're out of Gin, vodka is a good substitute that will keep the flavor profile the same. For a more tropical twist, try using rum instead - it pairs very well with pineapple!
- Fresh Lime Juice: If fresh limes aren't available, bottled lime juice can work in a pinch, though it may slightly affect the freshness of the taste. Another option is to use fresh lemon juice for a slightly different citrus kick.
- Pineapple Syrup: Agave nectar or honey syrup (2 parts honey to 1 part warm water) can be used as natural sweeteners if you don't have pineapple For a fruitier twist, you can try using another syrup, such as a mango or a coconut flavored one.
- Pineapple Juice: If you don't have pineapple juice, muddle fresh chunks at the bottom of your shaker before adding the other ingredients. Just make sure to remove the peel before and use a fine strainer when serving the drink to prevent any pulp from falling into the glass.
- Club Soda: For a spicier and sweeter twist, you can use ginger beer or ginger ale instead of soda water.
Making a Pitcher of Pineapple Collins:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Gin, 12 oz of pineapple juice, 8 oz of fresh lime juice, and 4 oz of pineapple syrup
- Mix: In a large pitcher, combine the Gin, fresh lime juice, pineapple syrup, and pineapple juice. Add ice and stir well.
- Serve: Strain to remove the ice, pour into ice-filled Collins glasses and top up with a dash of club soda. Garnish each glass with a pineapple slice of lime wheel and serve immediately. If you have some leftovers, be sure to keep it in the fridge (make sure no ice cubes are left inside) in an airtight container.
Making it Non-Alcoholic:
- Gin Substitute: Use a non-alcoholic gin substitute for a similar flavor without the alcohol.
- Proceed As Usual: Use this non-alcoholic substitute instead of the regular ingredient, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
The Pineapple Collins cocktail is naturally vegan as it doesn't contain any animal products. Most spirits, including gin, are vegan-friendly. Just ensure your syrup is vegan (some sugars are processed over bone char) or use agave nectar as a substitute. With this minor adjustment, you can follow the original steps and enjoy a vegan Pineapple Collins. What is a Pineapple Collins?
The Pineapple Collins is a variant of the classic Tom Collins cocktail. The main difference lies in substituting traditional lemon juice with lime and pineapple juice and the simple syrup with pineapple syrup for an added layer of flavor. That’s what gives this version its unique sweet and tangy flavor profile.
