Prep Glass: Fill a Collins glass with ice cubes. Give it a quick stir to chill well and set it aside.
Add Pineapple Syrup: Measure and pour ½ oz pineapple syrup into the shaker.
Add Lime Juice: Add 1 oz fresh lime juice.
Add Pineapple Juice: Add 1½ oz pineapple juice as well.
Add Gin: Finally, add 2 oz Gin to the mix.
Shake Well: Fill the shaker with ice, close it, and give it a good shake (10-15 seconds).
Strain: Take the Collins glass and use the cocktail strainer to remove any excess water inside. Add more ice if necessary and strain the drink from the shaker into the ice-filled glass.
Top up with Club Soda: Top-up with approx. 3-4 oz club soda and stir gently to combine.
Garnish: Finally, place a pineapple wedge or lemon wheel on the rim of the glass for garnish. Serve immediately.
