Instructions
- Prep Glass: Fill a Highball or Collins glass with ice. Give it a quick stir and set it aside.
- Add Sugar: Pour ½ oz sugar syrup into the shaker.
- Add Lime Juice: Add 1 oz fresh lime juice.
- Add Irish Whiskey: Measure and add 2 oz Irish Whiskey to the mix.
- Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
- Strain: Discard the ice in the Collins or Highball glass and refill it with fresh, new ice cubes. Then, use the cocktail strainer to pour the drink into the ice-filled glass.
- Top up with Soda Water: Top up with approx. 2 oz soda water (adjust to taste and to the size of the glass).
- Garnish: Garnish with a lime wedge and serve immediately.
Notes
Substitutes:
- Whiskey: If you don't have Irish whiskey, use bourbon for a sweeter profile. Rye whisky is also a good alternative.
- Lime Juice: Fresh lime juice is best, but bottled lime juice works if you're in a hurry. Lemon juice can be an alternative, though it slightly changes the drink's character.
- Sugar Syrup: You can make sugar syrup by dissolving equal parts of sugar and water over low heat. Honey syrup (2 parts honey mixed with 1 part water) also works well for a richer taste.

- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of whiskey, 8 oz of lime juice, and 4 oz of sugar syrup.
