Ingredients
 

  • 2 oz Irish Whiskey
  • 1 oz fresh lime juice
  • ½ oz sugar syrup
  • 2 oz soda water - to top up
  • Ice cubes
  • Lime wedge - for garnish, optional

Equipment

  • Highball or Collins Glass
  • Shaker
  • Cocktail Strainer
  • Measuring Jigger

Instructions

  • Prep Glass: Fill a Highball or Collins glass with ice. Give it a quick stir and set it aside.
  • Add Sugar: Pour ½ oz sugar syrup into the shaker.
  • Add Lime Juice: Add 1 oz fresh lime juice.
  • Add Irish Whiskey: Measure and add 2 oz Irish Whiskey to the mix.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Discard the ice in the Collins or Highball glass and refill it with fresh, new ice cubes. Then, use the cocktail strainer to pour the drink into the ice-filled glass.
  • Top up with Soda Water: Top up with approx. 2 oz soda water (adjust to taste and to the size of the glass).
  • Garnish: Garnish with a lime wedge and serve immediately.

Notes

Substitutes:

  • Whiskey: If you don't have Irish whiskey, use bourbon for a sweeter profile. Rye whisky is also a good alternative.
  • Lime Juice: Fresh lime juice is best, but bottled lime juice works if you're in a hurry. Lemon juice can be an alternative, though it slightly changes the drink's character.
  • Sugar Syrup: You can make sugar syrup by dissolving equal parts of sugar and water over low heat. Honey syrup (2 parts honey mixed with 1 part water) also works well for a richer taste.

Making a Pitcher of Limerick Drink:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of whiskey, 8 oz of lime juice, and 4 oz of sugar syrup.
  • Mix: Combine the whiskey, lime juice, and sugar syrup in a large pitcher. Add ice and stir well.
  • Serve: Strain to remove the ice, pour into ice-filled highball or Collins glasses, and top up each glass with soda water (approx. 2 oz per glass). Garnish each drink with a lime wedge and serve immediately. If you have some leftovers, be sure to keep them in the fridge (make sure no ice cubes are left inside) in an airtight container.

Making it Non-Alcoholic:

  • Irish Whiskey Substitute: Use a non-alcoholic Irish whiskey substitute; these are available and reasonably mimic whiskey's flavor.
  • Proceed As Usual: Use this non-alcoholic substitute instead of regular whiskey, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

Good news: the Limerick cocktail is already vegan-friendly! If you want to be extra careful, just make sure you’re using a vegan-certified sugar syrup (some sugars are processed over bone char and hence are not technically vegan).
