  • Prep Glass: Fill a Highball glass with ice cubes. Give it a stir to chill it and set it aside.
  • Prep Shaker: Place 2 slices of fresh ginger into the shaker and add ¾ oz simple syrup. Muddle well to extract the flavor of the ginger.
  • Add Mint: Add 6-8 fresh mint leaves into the shaker.
  • Add Lime Juice: Add ¾ oz fresh lime juice.
  • Add Gin: Add 1¾ oz Gin into the shaker as well.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Remove the ice in the highball glass and refill it with fresh, new ice cubes. Then, using both the cocktail strainer and fine strainer, strain the drink into the ice-filled glass.
  • Add Ginger Beer: Top up with approx. 3 oz ginger beeradjust to taste and to the size of the glass). Stir gently to combine.
  • Garnish: Garnish with a mint sprig sprinkled with some icing sugar and serve immediately.
