- 1 oz Dark Caribbean Rum
- 1 oz Blanco Tequila
- ½ oz agave syrup
- ½ oz lime juice
- ½ oz lemon juice
- ¼ oz simple syrup
- 2 dashes of Orange Bitters
- 1 egg - use the white for frothing, optional
- Ice cubes
- Lemon zest - for garnish, optional

Instructions
- Prep Glass: Fill a coupe glass with ice and give it a quick stir. Set it aside.
- Add Egg White (optional): Crack open 1 egg, separate white from yolk and pour the white into the shaker. Discard the yolk.
- Add Bitters: Pour 2 dashes of Orange Bitters into the shaker.
- Add Sugar & Agave Syrup: Add ¼ oz simple syrup and ½ oz agave syrup.
- Add Lemon & Lime Juices: Measure and pour ½ oz lime juice & ½ oz lemon juice into the shaker.
- Add Tequila & Rum: Finally, add 1 oz Blanco Tequila and 1 oz Dark Caribbean Rum to the mix.
- Dry Shake (only if using egg white): Close the shaker and shake vigorously, without ice, for about 15-20 seconds. If you’re not using egg white, skip this step and go to step 8.
- Shake with Ice: Open the shaker and fill it with ice cubes. Close the shaker and shake another time, for 10-15 seconds this time.
- Strain: Discard the ice inside the coupe glass. Using both the cocktail strainer and the fine strainer, pour the drink into the chilled glass.
- Garnish: Express a lemon peel on top of the drink and use another for garnish. Serve immediately.
Notes
Substitutes:
- Dark Caribbean Rum: If you don't have Dark Caribbean Rum, you can use any good quality dark rum. I've also tried spiced rum for an interesting twist.
- Blanco Tequila: Aged tequila works well if you still need to get Blanco tequila on hand. For a smokier flavor, try mezcal.
- Simple Syrup: You can make your syrup by dissolving equal parts sugar and water over low heat until fully combined.
- Agave syrup: for a different twist opt for maple syrup.
- Lime Juice & Lemon Juice: Freshly squeezed is always best, but bottled juice will work in a pinch.
- Orange Bitters: Regular aromatic bitters can be used if you don't have orange bitters, though it will slightly alter the flavor profile.
- Egg White: For those who prefer not to use raw egg whites, aquafaba (the liquid from canned chickpeas) is a great vegan alternative with similar frothiness.
Making it Non-Alcoholic:
- Rum Substitute: Use a non-alcoholic rum substitute; these are available and mimic the flavor profile quite well.
- Tequila Substitute: Opt for a non-alcoholic tequila alternative or use a combination of agave syrup and water to replicate the taste.
