Instructions
- Prep Glass: Fill your Nick & Nora glass with ice cubes.
- Add Peppercorns: Muddle 1 pinch black peppercorn into the shaker.
- Add Lemon: Measure and pour ½ oz lemon juice into the shaker.
- Add Honey Syrup: Add ½ oz honey syrup to the mix.
- Add Pear Purèe: Measure and pour 1 oz pear purée into the shaker.
- Add Vermouth: Add 1 oz Dry Vermouth to the mix.
- Add Rum: Measure and pour 1 oz Bacardi Carta Blanca White Rum into the shaker.
- Add Ice: Fill your shaker with ice cubes.
- Shake Well: Shake the mixture well until thoroughly combined and chilled.
- Strain into Glass: Fine strain the mixture into the prepared Nick & Nora.
- Garnish: Place a mint leaf on top for garnish.
Notes
Substitutes:
- Bacardi Carta Blanca White Rum: Any white rum will work just fine if you don't have Bacardi. I've also tried using vodka for a different but still enjoyable flavor.
- Strucchi Dry Vermouth: You can use any dry vermouth available to you. In a pinch, I've used sweet vermouth; it changes the profile slightly but still tastes great.
- Pear Purée: If you can't find pear purée, apple purée works as a good substitute. I've even used fresh pear juice when I wanted a lighter texture.
- Honey: For those who prefer a different sweetener, agave syrup or simple syrup can be used instead of honey.
- Lemon Juice: Fresh lime juice can replace lemon juice if needed.

- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 8 oz of Bacardi Carta Blanca White Rum, 8 oz of Strucchi Dry Vermouth, 8 oz of pear purée, 4 oz of honey, and 4 oz of lemon juice.
