  • ½ oz Toffee syrup or liqueur
  • 3 oz chilled Champagne, to top up
  • Ice cubes

Instructions

  • Prep Glass: Fill a flute or coupe glass with ice. Give it a quick stir and set it aside to chill.
  • Add Toffee Syrup or Liqueur: Pour ½ oz Toffee syrup or liqueur into the shaker.
  • Add Butterscotch Liqueur: Add ½ oz butterscotch liqueur.
  • Add Spiced Rum: Finally, pour in 1½ oz Spiced Rum.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Take the coupe or flute glass and discard the ice inside. Then, using both the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
  • Add Champagne: Top up with approx. 3 oz chilled Champagne (adjust quantity to taste and to the size of the glass) and serve immediately.

Substitutes:

  • Spiced Rum: If you don't have spiced rum, I've used regular dark rum with a pinch of cinnamon and nutmeg for a similar flavor profile.
  • Butterscotch Liqueur: Caramel liqueur works well if butterscotch is unavailable. It gives a slightly different sweetness but still complements the drink.
  • Toffee Liqueur or Syrup: I've tried using almond liqueur  in place of toffee liqueur, also white crème de cacao can be a good alternative.  
  • Sparkling Wine: If you are out of sparkling wine opt for a touch of white wine and soda water.

  • Scale: For a pitcher serving 8, multiply all ingredients by 8. Use 12 oz of spiced rum, 6 oz of butterscotch liqueur, and 6 oz of toffee liqueur.
