- 1 oz fresh lime juice
- ⅓ oz allspice liqueur
- ⅓ oz cane sugar syrup

Instructions
- Prep Glass: Fill a Coupe glass with ice. Give it a stir to chill it and set it aside.
- Add Sugar: In the shaker, pour ⅓ oz cane sugar syrup.
- Add Allspice Liqueur: Add ⅓ oz allspice liqueur.
- Add Lime Juice: Add 1 oz fresh lime juice.
- Add Spiced Rum: Finally, measure and add 2 oz spiced Rum to the mix.
- Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
- Strain: Take the Coupe glass and discard the ice inside. Then, using the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
- Garnish: Garnish with a lime wheel or twist and serve immediately.
Notes
Substitutes:
- Spiced Rum: You can use dark rum if you don't have spiced rum. The flavor profile will change slightly, but it will still be delicious. Light rum can also be used, as well as bourbon for a richer, deeper flavor.
- Fresh Lime Juice: In a pinch, bottled lime juice can work, but fresh is always best. You could also experiment with other citrus juices like lemon for a different twist.
- Allspice liqueur: If you can’t find allspice liqueur (such as Pimento Dram), you can use allspice syrup, either store-bought or homemade, as a substitute for this ingredient. Otherwise, you can use ⅓ oz extra of cane sugar syrup mixed with 1 dash of Angostura bitters instead of the allspice liqueur.
- Cane Sugar Syrup: If you're out of cane sugar syrup, you can make your own by dissolving equal parts cane sugar and water over low heat. Regular white sugar syrup also works for this recipe. Alternatively, agave nectar or honey syrup (2 parts honey to 1 part hot water) can be used for a different kind of sweetness.
Making a Pitcher of Spiced Daiquiri:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of dark rum, 8 oz of fresh lime juice, 3 oz of cane sugar syrup, and 3 oz of allspice liqueur.
- Mix: In a large pitcher, combine the dark rum, lime juice, cane sugar syrup, and allspice liqueur. Add ice and stir well.
- Serve: Strain to remove the ice, serve immediately into chilled coupe glasses and garnish each glass with a lime wheel or twist. If you have some leftovers, be sure to keep it in the fridge (make sure no ice cubes are left inside) in an airtight container.
Making it Non-Alcoholic:
- Spiced Rum Substitute: Use a non-alcoholic spiced rum substitute; these are available and do a good job mimicking the flavor of rum. If you’re feeling crafty, you can also make your own spiced rum substitute by infusing together rooibos tea and a bunch of spices of your liking (vanilla, cinnamon, clove, allspice and banana are always a good way to start). Mix all the ingredients together, add hot water, cover and let it infuse for at least 3h (the stronger the better, so if you have time let it infuse overnight. In that case, you can either let it rest in the fridge once the liquid has cooled down). Give it a taste, adjust the spice level if necessary and strain it once you’re happy with the result. Stored properly (in an airtight container in the fridge), this “tea-rum” can be kept for up to a week.
- Allspice Liqueur: You can use allspice syrup, either store-bought or homemade, as a substitute for this liqueur.
- Proceed As Usual: Use this non-alcoholic substitute instead of the regular dark rum, follow the original steps, and enjoy a non-alcoholic version.
