  • 1 oz Light Rum
  • 1 oz Dark Jamaican Rum
  • ½ oz fresh lime juice
  • ½ oz pineapple juice
  • ½ oz cane syrup
  • 1 bar spoon Maraschino liqueur
  • 1 bar spoon maraschino cherry syrup, from the jar
  • Crushed ice
  • Maraschino cherry and pineapple slice, for garnish, optional

Instructions

  • Prep Glass: Prep glass: Fill a rocks glass with ice. Give it a quick stir and set it aside.
  • Add Ingredients into the Shaker: In the shaker, combine 1 bar spoon maraschino cherry syrup, 1 bar spoon Maraschino liqueur, ½ oz fresh lime juice, ½ oz pineapple juice, ½ oz cane syrup, 1 oz Light Rum, and 1 oz Dark Jamaican Rum.
  • Add Ice and Shake: Fill your shaker with ice and shake vigorously for about 15 seconds.
  • Strain: discard the ice from your service glass and strain your drink in it.
  • Add Crushed Ice and Garnish: Fill your glass with crushed ice, garnish with a pineapple flag, and serve immediately.

Notes

Substitutes:

  • Light Rum: Any brand of light rum will work well in this cocktail. If you don’t have light rum on hand, you can substitute it with dark rum or even with a touch of agricole white rum for a stronger, earthier flavor.
  • Dark Jamaican Rum: We recommend using Jamaican rum for its intense, complex flavor, but any dark rum of your choice will be great as a substitute. Spiced rum is also a great alternative. 
  • Fresh Lime Juice: Bottled lime juice works in a pinch, but fresh is always best for that zesty kick. Another option is to use fresh lemon juice for a slightly different citrus kick.
  • Cane Syrup:  If you don't have any cane sugar syrup, you can easily make some at home by mixing together equal parts of powdered cane sugar and hot water. Stir well to dissolve and let it cool down before using it. In the refrigerator, this homemade syrup will last for about a month. Honey syrup (2 parts honey to 1 part warm water) or agave nectar can be used as natural sweeteners if you prefer not to use sugar.
  • Maraschino Cherry Syrup: Grenadine or regular cherry syrup can be an alternative if you still need to get maraschino cherry syrup.
  • Maraschino Liqueur: If you don’t have any Maraschino liqueur on hand, you can use a bar spoon of amaretto as a substitute. For a more floral and citrus-forward twist, Italicus or Cointreau can also be used as substitutes for the maraschino liqueur. Just keep in mind that maraschino liqueur has a pretty unique flavor and is hard to replace, so the overall taste of your cocktail will change slightly if you choose to use any of these substitutes.

The Shark’s Tooth cocktail is one of the “original” tiki drinks: the recipe in this article is adapted from Don the Beachcomber’s recipe, dating back to the 1960’s. Victor Bergeron’s Trader Vic 1972 Bartender Guide book also features a Shark’s Tooth recipe, slightly different from this one and sometimes referred to as “Shark’s Tooth nº1”.
