Notes

Bartender’s Tips:

Although this recipe is traditionally shaken, we also like to do it in a stirring glass. It preserves the drink's translucent color, and the controlled dilution offered by the stirring method maintains the drink’s rich texture and deep taste better than shaking does.

Substitutes:

  • Calvados: If you don't have Calvados, try using apple brandy as a substitute.
  • White Rum: Dark rum also works well if you don't have white rum on hand.
  • Swedish Punsch Liqueur: If you can't find Swedish Punsch (also called “Arrack Punsch”), you can make your own substitute by mixing together equal parts light rum and arrack. Infuse it with lemon zest, nutmeg, and cardamom, and add sugar syrup or honey to taste. For a little twist, you can use a blend of light rum, cachaça, and arrack as a base.

Making a Pitcher of Roulette Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 12 oz of Calvados, 4 oz of White Rum, and 4 oz of Swedish Punsch Liqueur.
  • Mix: Combine the Calvados, White Rum, and Swedish Punsch Liqueur in a large pitcher. Add ice and stir well.
  • Serve: Strain to remove the ice, serve immediately into chilled Martini or coupe glasses, and garnish each glass with an orange zest twist. If you have some leftovers, be sure to keep them in the fridge (make sure no ice cubes are left inside) in an airtight container.

Making it Vegan:

The standard recipe is vegan-friendly since it contains no animal products. If needed, just ensure that your specific brands of Calvados, White Rum, and Swedish Punsch Liqueur are certified vegan.
