  • 1 oz Sloe Gin, preferably Plymouth
  • 1 oz Campari
  • 3 fresh raspberries, + 1 for garnish optional
  • Ice cubes

Instructions

  • Prep Glass: Fill your Old Fashioned glass with ice cubes. Give it a quick stir and set it aside.
  • Muddle Raspberries: In a mixing glass, muddle 3 fresh raspberries until they release their juices.
  • Add Campari: Pour 1 oz Campari into the mixing glass.
  • Add Sloe Gin: Add 1 oz Sloe Gin.
  • Add London Dry Gin: Measure and pour 1½ oz London Dry Gin into the mixing glass as well.
  • Add Ice and Stir: Fill the mixing glass with ice. Using a bar spoon or a long stirrer, stir well (for about 15-20 seconds). Give it a taste and stir a bit more if you feel like more dilution is necessary.
  • Strain: Discard the ice in the Old Fashioned glass and refill it with fresh, new ice cubes. Then, using both the cocktail strainer and fine strainer, strain the drink into the ice-filled glass.
  • Garnish: Garnish with a fresh raspberry and serve immediately.

Notes

Substitutes:

  • London Dry Gin: If you don't have London Dry Gin, you can use any other type of gin you prefer. I've also tried using vodka for a different but enjoyable flavor profile.
  • Sloe Gin: If Sloe Gin is hard to find, try using a berry-flavored gin or liqueur as an alternative. It won't be the same but will still add a fruity note.
  • Campari: If you can’t find Campari or want to experiment with different versions of this cocktail, you can use other brands of aperitivo bitters to make this cocktail (such as Select Aperitivo for example).
  • Raspberries: If fresh raspberries are out of season, frozen raspberries work just as well. Just make sure to thaw them first.

Making a Pitcher of House of Payne Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 12 oz of London Dry Gin, 8 oz of Sloe Gin, and 8 oz of Campari, along with about 24
  • Mix: In a large pitcher, muddle the raspberries to extract their juice and then pour the gin, Sloe Gin, and Campari. Add ice and stir well.
  • Serve: Strain to remove the ice and the pieces of muddled raspberries, serve immediately into ice-filled Old Fashioned glasses and garnish with a fresh raspberry. If you have some leftovers, be sure to keep it in the fridge (make sure no ice cubes are left inside) in an airtight container.

  • Campari Substitute: Use a non-alcoholic aperitif or a bitter soft drink such as Crodino (prefer the red one) or San Bitter. Just make sure to stir it before use to remove the bubbles.
