Notes

Substitutes:

  • Rye Whiskey: Bourbon works well if you don't have rye whiskey. I've also tried using a good-quality dark rum for a different twist.
  • Ginger syrup: In a small saucepan, heat 1/2 cup fresh ginger juice until warm over low heat. Do not let the juice boil. Add 1 cup sugar, and whisk until sugar is dissolved. Store the syrup in a sealed container in the refrigerator until ready to
  • Wheat Beer: Any light beer can substitute for wheat beer if you prefer something less yeasty. I've used pale ale in a pinch, which still tastes great.
  • Lemon Juice: Freshly squeezed lemon juice is best, but bottled lemon juice works if you're in a hurry. Lime juice can also be an interesting twist.

Making a Pitcher of Here Comes the Sun Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 12 oz of rye whiskey, 6 oz of ginger syrup, and 4 oz of freshly squeezed lemon juice.
  • Mix: In a large pitcher, combine the rye whiskey, ginger syrup, and lemon juice with ice. Stir well.
  • Serve: Strain the mixture into chilled coupe glasses, top each with wheat beer, garnish with a lemon wedge, and serve immediately.

Making it Non-Alcoholic:

  • Whiskey Substitute: Use a non-alcoholic whiskey alternative; these are available and do a decent job mimicking whiskey's flavor profile.
  • Beer Substitute: Opt for non-alcoholic beer or ginger beer for an extra kick of ginger flavor.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

All ingredients in this recipe are naturally vegan-friendly! Ensure the sugar you use is vegan friendly and that your wheat beer is certified vegan, as some beers use animal products in filtration.
