- 1½ oz Rye Whiskey
- ¾ oz ginger syrup
- ½ oz freshly squeezed lemon juice
- 1 oz chilled wheat beer
- Lemon wedge - for garnish

Prep Glass: Fill a coupe glass with ice. Give it a quick stir and set it aside.
Add Lemon Juice: Pour ½ oz freshly squeezed lemon juice into the shaker.
Add Ginger Syrup: Add ¾ oz ginger syrup.
Add Rye Whiskey: Measure and pour 1½ oz Rye Whiskey into the shaker as well.
Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
Strain: Take the coupe glass and discard the ice inside. Then, using both the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
Top up with Beer: Top up with 1 oz chilled wheat beer.
Garnish: Garnish with a lemon wedge and serve immediately.
Substitutes:
- Rye Whiskey: Bourbon works well if you don't have rye whiskey. I've also tried using a good-quality dark rum for a different twist.
- Ginger syrup: In a small saucepan, heat 1/2 cup fresh ginger juice until warm over low heat. Do not let the juice boil. Add 1 cup sugar, and whisk until sugar is dissolved. Store the syrup in a sealed container in the refrigerator until ready to
- Wheat Beer: Any light beer can substitute for wheat beer if you prefer something less yeasty. I've used pale ale in a pinch, which still tastes great.
- Lemon Juice: Freshly squeezed lemon juice is best, but bottled lemon juice works if you're in a hurry. Lime juice can also be an interesting twist.
Making a Pitcher of Here Comes the Sun Cocktail:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 12 oz of rye whiskey, 6 oz of ginger syrup, and 4 oz of freshly squeezed lemon juice.
- Mix: In a large pitcher, combine the rye whiskey, ginger syrup, and lemon juice with ice. Stir well.
- Serve: Strain the mixture into chilled coupe glasses, top each with wheat beer, garnish with a lemon wedge, and serve immediately.
Making it Non-Alcoholic:
- Whiskey Substitute: Use a non-alcoholic whiskey alternative; these are available and do a decent job mimicking whiskey's flavor profile.
- Beer Substitute: Opt for non-alcoholic beer or ginger beer for an extra kick of ginger flavor.
- Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
All ingredients in this recipe are naturally vegan-friendly! Ensure the sugar you use is vegan friendly and that your wheat beer is certified vegan, as some beers use animal products in filtration.
