  • ¾ oz simple syrup
  • ¼ oz Maraschino Liqueur
  • 1 bar spoon Absinthe
  • Ice cubes
  • Star anise, for garnish, optional

  • Martini or Coupe Glass

Instructions

  • Prep Glass: Fill a Martini or Coupe glass with ice. Give it a quick stir and set it aside.
  • Add Absinthe: Pour 1 bar spoon Absinthe into the shaker.
  • Maraschino Liqueur: Add ¼ oz Maraschino Liqueur.
  • Add Simple Syrup: Add ¾ oz simple syrup.
  • Add Lime Juice: Measure and pour 1 oz fresh lime juice into the shaker as well.
  • Add Rum: Finally, add 2 oz White Rum of your choice to the mix.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Take the Coupe or Martini glass and discard the ice inside. Then, using both the cocktail strainer and the fine strainer, strain the shaken drink into the chilled glass.
  • Garnish: Garnish with a star anise (it should float on the surface of the drink) and serve immediately.

Notes

Substitutes:

  • White Rum: If you don't have white rum, you can use light rum as a substitute. I've also tried it with vodka for a different but still enjoyable flavor.
  • Absinthe: If Absinthe is too strong for your taste, try using Pernod or another anise-flavored liqueur. It's milder but still gives that unique flavor.
  • Fresh Lime Juice: Bottled lime juice works in a pinch, but fresh lime juice makes a difference. You can also use lemon juice for a slightly different citrus profile.
  • Maraschino Liqueur: If you don't have maraschino liqueur you can opt for Cherry Heering for a sweeter profile.
  • Simple syrup: Opt for agave nectar or honey syrup for a different twist.
