Ingredients

  • oz Gin, preferably London Dry
  • 1 oz cream of coconut
  • ½ oz fresh lemon juice
  • ¼ teaspoon curry powder, plus a pinch for garnish
  • Ice cubes

Equipment

  • Coupe or Martini Glass
  • Measuring Jigger
  • Shaker
  • Cocktail Strainer
  • Fine strainer
  • Bar spoon or Stirrer

Instructions

  • Prep Glass: Fill a Martini or Coupe glass with ice. Give it a quick stir and set it aside.
  • Mix Coconut Cream and Curry Powder: In the shaker, mix 1 oz cream of coconut with ¼ teaspoon curry powder. Stir well to combine (it should form a homogeneous paste).
  • Add Lemon Juice: Add ½ oz fresh lemon juice.
  • Add Gin: Measure and pour 2½ oz Gin into the shaker as well.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Take the Coupe or Martini glass and discard the ice inside. Then, using both the cocktail strainer and the fine strainer, strain the drink into the chilled glass.
  • Garnish: Sprinkle a pinch of curry powder on top of the drink for garnish and serve immediately.

Notes

Substitutes:

  • Gin: If you don't have Gin, try using vodka for a cleaner taste. You can also try and use white rum, which adds a different but pleasant flavor profile.
  • Cream of Coconut: You can use coconut milk as a substitute, though it will be less sweet and creamy. Adding a bit of simple syrup can help balance this out.
  • Fresh Lemon Juice: Lime juice works well if you're out of lemons. It gives a slightly different citrus note but complements the other ingredients nicely. Although fresh juices are always better, bottled lemon juice will also work in a pinch.
  • Curry Powder: You can use a blend of curry and garam masala powder if you want to experiment with a little twist on this cocktail. Cardamom and turmeric are also nice additions to this drink. Feel free to get creative and use your own spice mix!

Making a Pitcher of Everest Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 20 oz of Gin, 8 oz of coconut cream, 4 oz of lemon juice, and about 2 teaspoons of curry powder.
  • Mix: Combine the coconut cream and curry powder in a bowl. Whisk thoroughly to combine, until the mixture forms a smooth paste. Add the paste to your pitcher and pour the gin and lemon juice over. Whisk again to combine.
  • Add Ice: Add ice and stir well.
  • Serve: Strain to remove the ice, serve immediately into chilled coupe or Martini glasses, and garnish each drink by sprinkling a pinch of curry powder on top. If you have some leftovers, be sure to keep them in the fridge (make sure no ice cubes are left inside) in an airtight container.

Making it Non-Alcoholic:

  • Gin Substitute: Use a non-alcoholic gin substitute; these are available and reasonably mimic Gin's botanicals. You can also use a blend of non-alcoholic gin (1 ½ oz) and coconut water (1 oz) to bring an extra touch of coconut flavor to your drink.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

Good news: the Everest cocktail is already vegan-friendly! It doesn't contain any animal products and most spirits, including gin, are naturally vegan. If you have any doubt about an ingredient, always check the brand's website or contact them directly to ensure their products are vegan.
