Ingredients

  • 2 oz Reposado Tequila
  • 1 oz chamomile syrup
  • Club soda
  • Ice cubes
  • Lemon slice or twist, for garnish, optional

Equipment

  • Highball Glass
  • Measuring Jigger
  • Stirrer or Bar Spoon

Instructions

  • Prep Glass: Fill your Highball glass with ice cubes.
  • Add Chamomile Syrup: Measure and pour 1 oz of Chamomile Syrup into the glass.
  • Add Tequila: Pour 2 oz of Reposado Tequila over the ice.
  • Top with Club Soda: Fill the rest of the glass with Club Soda.
  • Stir Gently: Use a bar spoon to stir the ingredients gently.
  • Garnish: Place a lemon slice or twist into the glass for garnish.

Notes

Substitutes:

  • Reposado Tequila: If you don't have Reposado Tequila, you can use Blanco Tequila for a lighter flavor. I've also tried using vodka, which gives a different but still enjoyable taste.
  • Chamomile Syrup: You can make your own chamomile syrup by steeping chamomile tea bags in hot water and adding sugar. If you're in a pinch, honey syrup works well too, though it changes the flavor slightly.
  • Club Soda: Sparkling water can replace club soda if needed. It's less salty but still adds that fizzy element.

Making a Pitcher of Chamomile Tequila Highball:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Reposado Tequila and 8 oz of Chamomile Syrup.
  • Mix: In a large pitcher, combine the tequila and chamomile syrup. Stir well.
  • Serve: Pour the mixture into individual ice-filled Highball glasses, top with club soda, garnish with a lemon slice or twist, and serve immediately.

Making it Non-Alcoholic:

  • Tequila Substitute: Use a non-alcoholic tequila substitute; these are available and reasonably mimic tequila's flavor profile.
  • Proceed As Usual: Use this non-alcoholic substitute instead of the regular tequila, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

  • Chamomile Syrup: Ensure your chamomile syrup is vegan-friendly. Some store-bought syrups may contain honey or other animal products. I make my own using sugar and chamomile tea bags to keep it vegan.
  • Proceed As Usual: Follow the original steps using your vegan-friendly chamomile syrup and enjoy a vegan version of this refreshing cocktail.
