  • Strain: Discard the ice from the martini glass and fine-strain the mixture into the chilled glass.

Notes

Substitutes:

  • Tequila Reposado: If you don't have tequila reposado, you can use blanco tequila for a lighter flavor or añejo tequila for a richer taste.
  • Pink Grapefruit Juice: Regular grapefruit juice works fine if you can't find pink grapefruit juice. I've also used a pinch mix of orange and lemon juice.
  • Cranberry Juice: Pomegranate juice can be a good alternative if you're out of cranberry juice; it adds a different but pleasant tartness.
  • Simple Syrup: You can make your syrup by dissolving equal parts sugar and water over low heat until fully dissolved.

Making a Pitcher of Bald Eagle Drink:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of tequila reposado, 4 oz of pink grapefruit juice, 4 oz of cranberry juice, 2 oz of lime juice, 2 oz of lemon juice, and 2 oz of simple syrup.
  • Mix: In a large pitcher, combine the tequila reposado, pink grapefruit juice, cranberry juice, lime juice, lemon juice, and simple syrup with ice. Stir well.
  • Serve: Strain the mixture into individual salt-rimmed and serve immediately.

Making it Non-Alcoholic:

  • Tequila Substitute: Use a non-alcoholic tequila substitute; these are available and reasonably mimic tequila's flavor profile.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

The Bald Eagle Drink is already vegan-friendly, as it uses plant-based ingredients like juices and simple syrup. If you're strict about it, ensure that your simple syrup is made with vegan sugar.
