  • 1 oz fresh lime juice

  • 5 oz club soda, to top up
  • Lime wheel or twist, for garnish, optional

Instructions

  • Prep Glass: Fill a Collins glass with ice cubes. Give it a quick stir to chill it well and set it aside.
  • Add Agave Syrup: Measure and pour ⅔ oz agave syrup into the shaker.
  • Add Lime Juice: Add 1 oz fresh lime juice.
  • Add Mezcal: Finally, add 2 oz Mezcal to the mix.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Take the Collins glass and use the cocktail strainer to remove any excess water inside. Using the cocktail strainer, now strain the drink from the shaker into the ice-filled glass.
  • Top-up: Top-up with approx. 5 oz club soda (adjust to taste and to the size of the glass).
  • Garnish and Serve: Finally, place a lime wheel or twist into the glass for garnish and serve immediately.

Substitutes:

  • Mezcal: If you don't have Mezcal, use tequila instead. It won't have the same smoky flavor but will still make a tasty cocktail.
  • Fresh Lime Juice: You can use bottled lime juice in a pinch, but fresh is always best. You could also try lemon juice for a different twist.
  • Agave Syrup: Honey syrup (3 parts honey to 1 part warm water) or simple syrup can be used as a substitute for agave syrup if needed.
