- 2 oz Mezcal
- 1 oz fresh lime juice
- ⅔ oz agave syrup
- 5 oz club soda - to top up
- Lime wheel or twist - for garnish, optional
Prep Glass: Fill a Collins glass with ice cubes. Give it a quick stir to chill it well and set it aside.
Add Agave Syrup: Measure and pour ⅔ oz agave syrup into the shaker.
Add Lime Juice: Add 1 oz fresh lime juice.
Add Mezcal: Finally, add 2 oz Mezcal to the mix.
Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
Strain: Take the Collins glass and use the cocktail strainer to remove any excess water inside. Using the cocktail strainer, now strain the drink from the shaker into the ice-filled glass.
Top-up: Top-up with approx. 5 oz club soda (adjust to taste and to the size of the glass).
Garnish and Serve: Finally, place a lime wheel or twist into the glass for garnish and serve immediately.
Substitutes:
- Mezcal: If you don't have Mezcal, use tequila instead. It won't have the same smoky flavor but will still make a tasty cocktail.
- Fresh Lime Juice: You can use bottled lime juice in a pinch, but fresh is always best. You could also try lemon juice for a different twist.
- Agave Syrup: Honey syrup (3 parts honey to 1 part warm water) or simple syrup can be used as a substitute for agave syrup if needed.
Making a Pitcher of Mezcal Collins:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Mezcal, 8 oz of fresh lime juice, 5 ½ oz of agave syrup, and approximately 5 oz of club soda.
- Mix: In a large pitcher, combine the Mezcal, lemon juice, and agave syrup. Add ice and stir well.
- Serve: Strain to remove the ice, serve immediately into ice-filled highball or Collins glasses, and garnish each glass with a lime wheel or twist. If you have some leftovers, keep them in the fridge (make sure no ice cubes are left inside) in an airtight container.
Making it Non-Alcoholic:
- Mezcal Substitute: Use a non-alcoholic spirit that has a smoky flavor profile, or a non-alcoholic tequila substitute; several brands are available that mimic Tequila's flavor quite well. You can also try making your own substitute by mixing together water, a pinch of smoked salt, a splash of tonic, and a bit of agave syrup (to taste).
- Proceed As Usual: Use this non-alcoholic substitute instead of the Mezcal, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
The Mezcal Collins cocktail is naturally vegan as it doesn't contain any animal products. Most distilled spirits, including mezcal, are vegan-friendly (just make sure not to use a “pechuga” type of Mezcal, as this special kind is not vegan-friendly). In case of doubt, always check the brand's website or contact them directly to ensure their products are vegan.
