Cool off this summer with an easy Parasol Cocktail recipe! Mix white rum, lime juice, banana liqueur, and pineapple juice to create a refreshing drink.

- 1½ oz White Rum
- 1 oz fresh lime juice
- 1 oz Banana Liqueur - such as Giffard
- ½ oz pineapple juice
- Ice cubes
- Pineapple slice or cherry - for garnish, optional

Prep Glass: Fill your coupe glass with ice to chill.
Add Pineapple Juice: Pour ½ oz pineapple juice into the shaker.
Add Lime Juice: Measure and pour 1 oz fresh lime juice into the shaker.
Add Banana Liqueur: Add 1 oz Banana Liqueur to the mix.
Add Rum: Pour 1½ oz White Rum into the shaker
Add Ice: Fill your shaker with ice cubes.
Shake Well: Shake the mixture well until chilled.
Strain and Serve: Fine strain the mixture into the chilled coupe glass.
Garnish: Place a pineapple slice or cherry on top for garnish.
Substitutes:
- White Rum: You can use dark rum for a different twist if you don't have white rum. I've also tried it with vodka for a cleaner taste.
- Fresh Lime Juice: Bottled lime juice works in a pinch, but fresh is always best for that zesty kick. Lemon juice can also be an alternative if you're out of limes.
- Banana Liqueur: If you can't find banana liqueur, try using a banana-flavored syrup or even a small amount of mashed ripe banana for a natural flavor.
- Pineapple Juice: Freshly squeezed pineapple juice tastes fantastic, but canned works too. You can use orange juice for a different tropical note in a bind.
Making a Pitcher of Parasol Cocktail:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 12 oz of white rum, 8 oz of fresh lime juice, 8 oz of banana liqueur, and 4 oz of pineapple juice.
- Mix: In a large pitcher, combine the white rum, fresh lime juice, banana liqueur, and pineapple juice with ice. Stir well.
