Ingredients
 

  • 2 oz Aguardiente
  • 1 oz coconut cream
  • 2 oz pineapple juice
  • ½ oz lime juice
  • Ice cubes
  • Pineapple slice or wedge - for garnish, optional

Equipment

  • Highball Glass
  • Measuring Jigger
  • Shaker
  • Strainer

Instructions

  • Prep Glass: Fill your highball glass with ice cubes, stir and set it aside.
  • Add Pineapple Juice: Pour in 2 oz pineapple juice into the shaker.
  • Add Lime Juice: Add ½ oz lime juice to the mix.
  • Add Coconut Cream: Measure and add 1 oz coconut cream to the shaker.
  • Add Aguardiente: Pour 2 oz Aguardiente into the shaker.
  • Add Ice: Fill your shaker with ice.
  • Shake Well: Shake the ingredients vigorously for about 10 seconds.
  • Strain and Serve: Strain the mixture into the highball glass over fresh ice.
  • Garnish: Place a pineapple slice or wedge on the rim of the glass for garnish.

Notes

Substitutes:

  • Aguardiente: If you don't have Aguardiente, you can use white rum as a substitute. I've also tried using vodka for a different but still enjoyable flavor profile.
  • Coconut Cream: In case you run out of coconut cream, coconut milk works, too, though it's less rich. You can also blend coconut flakes with water to make a quick, homemade version.
  • Pineapple Juice: Freshly squeezed pineapple juice tastes best, but canned or bottled versions work fine too. Pineapple-flavored soda can add an interesting twist if you're in a pinch.
  • Lime Juice: Fresh lime juice is ideal, but bottled lime juice can be used if necessary. Lemon juice can also serve as an alternative, though it will slightly alter the flavor.

Making a Pitcher of Coco Loco:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Aguardiente, 8 oz of coconut cream, 16 oz of pineapple juice, and 4 oz of lime juice.
  • Mix: In a large pitcher, combine the Aguardiente, coconut cream, pineapple juice, and lime juice. Stir well.
  • Serve: Pour the mixture into individual ice-filled highball glasses, garnish with a pineapple slice or wedge, and serve immediately.

Making it Non-Alcoholic:

  • Aguardiente Substitute: Use a non-alcoholic spirit that mimics the flavor of Aguardiente.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

  • Coconut Cream Substitute: Ensure that your coconut cream is vegan-friendly; some brands may add non-vegan ingredients. Alternatively, use full-fat coconut milk or make your own by blending coconut flakes with water.
  • Proceed As Usual: Follow the original steps using vegan-friendly ingredients to enjoy a vegan Coco Loco cocktail.
