Prep Glass: Pour hot water into your Cognac glass to warm it up. Set it aside.
Combine Ingredients: In the metal mug or frothing pitcher, combine 2 oz Brandy with ½ oz simple syrup and 2 dashes of Angostura aromatic bitters. Give it a quick stir.
Prep Material: Gather your kitchen blowtorch, a cup with 1 oz hot water inside, a small saucer, and your Cognac glass filled with hot water. As a safety measure, also prepare an extra bowl of tap water that you’ll keep nearby while you’re flaming the drink.
Flame It Up: Discard the hot water inside the Cognac glass. Using the kitchen blowtorch, flame the mix inside the metal tin.
Serve: Delicately pour the drink into the warmed Cognac glass and immediately pour 1 oz hot water to put out the flame. Cover the glass with the saucer to extinguish any remaining flame and wait a few minutes for the drink to cool down.
Garnish: Twist a lemon peel over the drink to release its oils, then drop it into the glass. Serve immediately and enjoy while the drink is still hot.
