Ingredients
 

  • oz Gold Rum
  • ½ oz Galliano
  • oz pineapple juice
  • 1 dash fresh lime juice
  • Prosecco or any sparkling wine - to top of the glass

Equipment

  • Cocktail Shaker
  • Measuring Jigger
  • Strainer and fine-strainer
  • Champagne flute or any tall glass

Instructions

  • Chill the Glass: Stir some ice cubes into your champagne flute or place it in the freezer for a few hours.
  • Mix Ingredients: In a cocktail shaker combine 1 dash fresh lime juice, 2½ oz pineapple juice, ½ oz Galliano, and 1½ oz Gold Rum.
  • Shake Well: Add ice to the shaker and give the mixture a good shake until chilled.
  • Strain: Pour the mixture into the chilled champagne flute, leaving the ice cubes behind and some space at the top.
  • Top with Prosecco: Top with Prosecco or any sparkling wine in the glass.

Notes

Substitutes:

  • Gold Rum: I've tried using white rum when I ran out of gold rum. The flavor profile changes slightly, but it still tastes great. Dark rum can also work but will give a richer, deeper flavor.
  • Galliano: If you can't find Galliano, you can use another herbal liqueur like Yellow Chartreuse. It alters the taste but in a delightful way.
  • Prosecco: Any sparkling wine or club soda can replace Prosecco if needed. Just remember, the bubbles make the drink!

Making a Pitcher:

  • Scale: For a pitcher serving 8, multiply all ingredients by 8. That's 12 oz of gold rum, 4 oz of Galliano, 20 oz of pineapple juice, 8 dashes of lime juice, and one bottle of Prosecco should be enough.
  • Mix: Combine the gold rum, Galliano, pineapple, and lime juice in a large pitcher with ice.
  • Serve: Pour the mixture into individual champagne flutes, top each with Prosecco, and serve immediately.

Making it Non-Alcoholic:

  • Gold Rum Substitute: Use a non-alcoholic rum alternative or a mix of apple juice and a touch of almond extract.
  • Galliano Substitute: Opt for a non-alcoholic herbal or vanilla syrup with a hint of anise flavor.
  • Prosecco Substitute: Use sparkling water or club soda to maintain the fizz.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

The Barracuda Cocktail is inherently vegan, as it contains no animal-derived ingredients. However, always check your ingredients' labels, especially liqueurs, as some might have hidden non-vegan additives. If you use a different brand or substitute, ensure it aligns with vegan standards.
