Ingredients
 

  • 1 oz Spiced Rum
  • ½ oz coffee liqueur
  • 2 oz pineapple juice
  • ½ oz lemon juice
  • 1 oz coconut milk
  • Ice cubes
  • Pineapple slice or cherry - for garnish, optional

Equipment

  • Highball Glass
  • Measuring Jigger
  • Shaker
  • Strainer

Instructions

  • Prep Glass: Fill your highball glass with ice cubes, stir and set it aside.
  • Add Juices: Add ½ oz lemon juice and 2 oz pineapple juice into the shaker.
  • Add Milk: Measure and pour 1 oz coconut milk into the shaker.
  • Add Coffee Liqueur: Add ½ oz coffee liqueur to the mix.
  • Add Rum: Measure and pour 1 oz Spiced Rum into the shaker.
  • Add Ice: Fill the shaker with ice cubes.
  • Shake: Shake the mixture well to blend all the flavors.
  • Strain: Strain the cocktail into the prepared highball glass over fresh ice.
  • Garnish: Add a pineapple slice or cherry on top for garnish.

Notes

Substitutes:

  • Spiced Rum: If you don't have spiced rum, I've used dark rum for a richer flavor or light rum for a milder taste.
  • Coffee Liqueur: You can substitute coffee liqueur with a splash of cold brew coffee and a bit of simple syrup.
  • Coconut Milk: I've tried using coconut cream for a thicker texture or almond milk for a lighter version.

Making a Pitcher of Bahama Papa:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 8 oz of spiced rum, 4 oz of coffee liqueur, 16 oz of pineapple juice, 4 oz of lemon juice, and 8 oz of coconut milk.
  • Mix: In a large pitcher, combine all the ingredients and stir well.
  • Serve: Pour the mixture into individual ice-filled highball glasses, garnish with pineapple slices or cherries, and serve immediately.

Making it Non-Alcoholic:

  • Spiced Rum Substitute: Use non-alcoholic spiced rum alternatives available in stores or mix apple juice with a dash of cinnamon for a touch of spiciness.
  • Coffee Liqueur Substitute: Opt for decaffeinated cold brew coffee mixed with simple syrup to mimic the coffee liqueur's flavor.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients and follow the original steps.
