Ingredients
 

  • 2 oz sage-infused Gin
  • 1 oz fresh lime juice
  • ½ oz Limoncello
  • ½ oz agave syrup
  • Ice cubes
  • Powdered sugar - to rim the glass, optional
  • Lime slice or twist - for garnish, optional

Equipment

  • Old Fashioned Glass
  • Measuring Jigger
  • Shaker
  • Cocktail Strainer

Instructions

  • Prep Glass: Fill a rock or Old Fashioned glass with ice. Give it a quick stir and set it aside.
  • Add Agave Syrup: Pour ½ oz agave syrup into the shaker.
  • Add Lime Juice: Add 1 oz fresh lime juice.
  • Add Limoncello: Measure and pour ½ oz Limoncello into the shaker as well.
  • Add Gin: Finally, add 2 oz sage-infused Gin to the mix.
  • Rim the Glass (optional): Discard the ice inside the Old Fashioned glass. Use a lime slice to slightly wet the rim of the glass and delicately press the edge of the glass into the surface of a plate filled with sugar. Set it aside.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: If any, discard the ice in the Old Fashioned glass and refill it with fresh, new ice cubes (you can also use the cocktail strainer to remove the excess water that has formed at the bottom of the glass and add a few more ice cubes if necessary). Then, use the cocktail strainer to pour the drink into the ice-filled glass.
  • Garnish: Garnish with a lime slice or twist and serve immediately.

Notes

Sage-Infused Gin:

Ingredients:
  • 1 liter London Dry Gin
  • 10 grams dried sage
Instructions:
  1. Add the dried sage directly to the gin in a large, clean, sealable container. Prefer glass over plastic containers as glass does not retain flavors & smells as much as plastic usually does.
  2. Stir gently to ensure the sage is evenly distributed in the liquid. Close the container or cover it with plastic wrap.
  3. Allow the mixture to infuse at room temperature for 30 minutes.
  4. Taste the gin to check the flavor intensity. If more sage flavor is desired, continue infusing, checking every 10–15 minutes.
  5. Once the desired flavor is reached, strain the gin through a fine mesh or cheesecloth to remove the sage.
  6. Transfer the infused gin back into a clean bottle for storage. Keep at room temperature and away from direct sunlight.

Substitutes:

  • Limoncello: If you don't have Limoncello, you can use lemon syrup and/or a touch of Triple Sec as a substitute.
  • Sage-Infused Gin: If you are not a gin fan of sage, you can infuse your gin with other aromatics (such as rosemary, thyme, lemon thyme…). You could also omit the infusion, but in that case try to use a gin with strong botanical notes to match the cocktail.
  • Lime Juice: Freshly squeezed lime juice is best, but bottled lime juice works in a pinch. You can also use fresh lemon juice for a slightly different citrus profile.

Making a Pitcher of Yellow Cab Cocktail:

  • Prepare glassware: If you want, you can start by rimming each one of your serving glasses with powdered sugar. For best results, keep the glasses in the fridge or freezer after rimming.
  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of sage-infused Gin, 8 oz of Limoncello, 4 oz of fresh lime juice and 4 oz of agave syrup.
  • Mix: In a large pitcher, combine the Limoncello, sage-infused Gin, fresh lime juice and agave syrup. Add ice and stir well.
  • Serve: Strain to remove the ice, serve immediately into ice-filled Old Fashioned or rocks glasses and garnish each glass with a lime slice or zest. If you have some leftovers, be sure to keep it in the fridge (make sure no ice cubes are left inside) in an airtight container.

Making it Non-Alcoholic:

  • Limoncello Substitute: Use a non-alcoholic lemon syrup; these are available and mimic the citrusy sweetness well.
  • Gin Substitute: Opt for a non-alcoholic gin substitute; these reasonably mimic Gin's botanicals. You can infuse it with sage as well, but the infusion might take longer as alcohol acts as an accelerant for flavor extraction.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

The Yellow Cab Cocktail is naturally vegan as it contains no animal products. If you're strict about it, just ensure that your Limoncello and gin brands are certified vegan.
