Substitutes:
- Scotch Whiskey: If you don't have Scotch Whiskey, try using bourbon for a sweeter profile. I've also used rye whiskey for a spicier kick.
- Sweet Vermouth: In a pinch, you can use dry vermouth, but add a small splash of simple syrup to balance the flavors. I've found that it works well.
- Pedro Ximenez Sherry: If you can't find Pedro Ximenez Sherry, use a sweet port or rich Madeira wine as an alternative. They bring similar sweetness and depth.
- Orange Bitters: Angostura bitters can work if you don't have orange bitters, though it will change the flavor slightly.
Making a Pitcher of William Wallace Cocktail:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of Scotch Whiskey, 4 oz of Sweet Vermouth, and 4 oz of Pedro Ximenez Sherry, along with 16 dashes of Orange Bitters.
- Mix: In a large pitcher, combine the Scotch Whiskey, Sweet Vermouth, Pedro Ximenez Sherry, and Orange Bitters with ice. Stir well.
- Serve: Strain the mixture into chilled coupe glasses, garnish with an orange twist, and serve immediately.
Making it Non-Alcoholic:
- Scotch Whiskey Substitute: Use a non-alcoholic whiskey substitute; these are available and reasonably mimic whiskey's flavors.
- Sweet Vermouth Substitute: Opt for a non-alcoholic vermouth or make a simple syrup infused with herbs and spices to mimic vermouth's complexity.
- Pedro Ximenez Sherry Substitute: Use grape juice with molasses for sweetness and depth.
- Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
