Ingredients
 

  • 2 oz Rum
  • 4 oz pineapple juice
  • ½ oz lime juice
  • ½ oz grenadine
  • Ice cubes
  • Pineapple slice or cherry - for garnish, optional

Equipment

  • Highball Glass
  • Shaker
  • Strainer
  • Measuring Jigger

Instructions

  • Prep Glass: Fill your highball glass with ice cubes to chill.
  • Add Grenadine: Pour ½ oz grenadine into the shaker.
  • Add Lime Juice: Add ½ oz lime juice to the mix.
  • Add Pineapple Juice: Measure and pour 4 oz pineapple juice into the shaker.
  • Add Rum: Pour 2 oz Rum.
  • Shake: Fill your shaker with ice cubes and shake vigorously for about 15 seconds.
  • Strain: Strain your cocktail into your highball glass over fresh ice.
  • Garnish: Place a pineapple slice or cherry into the glass for garnish.

Notes

Substitutes:

  • Rum: If you don't have rum, try using vodka for a different but enjoyable flavor. I've also used coconut rum for an extra tropical twist.
  • Pineapple Juice: If you're out of pineapple juice, mango juice works well as a substitute and adds a unique flavor.
  • Lime Juice: Lemon juice can replace lime juice if needed, though it will slightly alter the taste.
  • Grenadine: Pomegranate juice mixed with simple syrup can stand in for Grenadine in a pinch.

Making a Pitcher of Tonga Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of rum, 32 oz of pineapple juice, 4 oz of lime juice, and 4 oz of Grenadine.
  • Mix: In a large pitcher, combine the rum, pineapple juice, lime juice, and Grenadine. Stir well.
  • Serve: Pour the mixture into ice-filled highball glasses, garnish with a pineapple slice or cherry, and serve immediately.

Making it Non-Alcoholic:

  • Rum Substitute: Use a non-alcoholic rum substitute; these are available and do a good job mimicking rum's flavor profile.
  • Proceed As Usual: Use this non-alcoholic substitute instead of regular rum, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

  • Ensure Ingredients Are Vegan: Most ingredients in this recipe are naturally vegan, but always check labels to ensure no animal products are used.
  • Grenadine: Some commercial grenadines may contain animal-derived colorings; opt for natural pomegranate syrup or make your own to ensure it's vegan-friendly.
