Ingredients

  • 2 oz Tequila
  • 1 oz lime juice
  • ¾ oz simple syrup
  • 1 egg white - optional
  • 1 oz club soda - to top up
  • Lime wheel or twist - for garnish, optional

Equipment

  • Highball Glass or Champagne Flute
  • Measuring Jigger
  • Cocktail Shaker
  • Cocktail Strainer
  • Fine strainer

Instructions

  • Prep Glass: Fill a Highball glass (or champagne flute) with ice cubes. Give it a stir to chill it and set it aside.
  • Add Egg White (optional): Crack open 1 egg white, separate white from yolk and pour the white into the shaker. Discard the yolk.
  • Add Simple Syrup: Add ¾ oz simple syrup.
  • Add Lime Juice: Measure and pour 1 oz lime juice into the shaker.
  • Add Tequila: Pour 2 oz Tequila of your choice into the shaker.
  • Shake Well: Fill the shaker with ice. Close it well and shake the ingredients vigorously for about 15 seconds.
  • Dry Shake (only if using egg white): Open the shaker. Using the cocktail strainer, pour the liquid in the other tin and discard the ice. Close the shaker again and shake another time, for 15-20 seconds, without ice this time.
  • Strain: Take the Highball glass and discard the ice inside. Using both the cocktail strainer and the fine strainer, strain the drink from the shaker into the chilled glass.
  • Add Club Soda: Let the cocktail rest for a few seconds and top up with 1 oz club soda. The foam should rise slightly above the top of the glass.
  • Garnish: Garnish with a lime wheel on the rim of the glass or with a lime peel (express the lime zest on top of the drink and place it on the rim of the glass) and serve immediately.

Notes

Substitutes:

  • Tequila: If you're out of Tequila, you can substitute white rum or vodka. Both will give you a different flavor profile but still work well with the lime and simple syrup. If you’re looking for a smokier, more potent twist on this drink, Mezcal is also a great option.
  • Lime Juice: Bottled lime juice can be used in a pinch if fresh limes aren't available, though fresh is always best. Fresh lemon juice can also be used for a slightly different citrus kick.
  • Simple Syrup: If you don't have simple syrup, you can make your own by dissolving equal parts sugar and water over heat. Alternatively, agave nectar or honey syrup (2 parts honey to 1 part hot water) can be used for a different kind of sweetness.
  • Egg white: If you don’t have eggs on hand or simply are not a fan of egg white, you can simply omit it or use aquafaba as a substitute (see section “Making it vegan”). If you’re concerned about food safety, you can also use bottled and pasteurized egg whites: it will also make for a nice frothy texture and the end result will be the same.

Making it Non-Alcoholic:

  • Tequila Substitute: Use a non-alcoholic tequila substitute; these are available and do a good job mimicking Tequila's flavor. Use a non-alcoholic tequila substitute; several brands are available that mimic Tequila's flavor quite well. Otherwise, you can use fresh orange juice as a substitute. You can also try making your own substitute by mixing together water, a pinch of smoked salt, a splash of tonic and a bit of agave syrup (to taste).
  • Proceed As Usual: Use this non-alcoholic substitute instead of the regular Tequila, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

  • Egg white: if you want to make your cocktail foamy, you can use ½ ounce of aquafaba (chickpeas water) to replace the egg white. Follow all the steps, as aquafaba also needs to be shaken twice to make a proper foam.
  • Simple Syrup: Make sure that your simple syrup or sugar is vegan friendly as some sugar manufacturers use bone char during the refining process. Organic & unrefined sugar are usually the easiest and safest ways to go if you’re looking for a vegan friendly option.
  • Proceed As Usual: With these vegan-friendly alternatives, follow the original steps to enjoy a delicious vegan Tequila Fizz.
