  • 1 oz pineapple juice
  • oz lime juice
  • ½ oz cinnamon syrup
  • 2 dashes of Angostura aromatic bitters
  • Ice cubes
  • Pineapple slice and/or cherry - for garnish, optional

Equipment

  • Highball or Hurricane Glass
  • Cocktail Shaker
  • Cocktail Strainer
  • Measuring Jigger

Instructions

  • Prep Glass: Fill your highball or hurricane glass with ice cubes. Give it a stir to chill it and set it aside.
  • Prep Shaker: In the shaker, mix together 2 dashes of Angostura aromatic bitters and ½ oz cinnamon syrup.
  • Add Juices: Add 1 ½ oz fresh orange juice, 1 oz pineapple juice and ⅔ oz lime juice to the shaker:
  • Add Spiced Rum: Finally, add 2 oz Spiced Rum to the mix.
  • Shake Well: Fill the shaker with ice, close it and give it a good shake (10-15 seconds).
  • Strain: Take the Highball or Hurricane glass and use the cocktail strainer to remove any excess water inside. Add more ice if necessary and strain the drink from the shaker over the ice filled glass.
  • Garnish: Garnish with a pineapple wedge and/or a maraschino cherry and serve immediately.

Notes

Substitutes:

  • Spiced Rum: If you don't have spiced rum, use regular dark rum and add a pinch of cinnamon and nutmeg to mimic the spiciness. For a lighter flavor, white rum works, too, but you'll lose some depth.
  • Fresh Orange Juice: Grapefruit juice can be used as an alternative to orange juice for a more tart punch. Although we recommend using freshly squeezed juice whenever possible, bottled orange juice can also do the trick for making this recipe.
  • Pineapple Juice: Mango juice is a good substitute for pineapple juice; it maintains a tropical vibe.
  • Fresh Lime juice: freshly squeezed juice is always the best option, but bottled juice will work as well if you’re out of fresh limes. Otherwise, fresh lemon juice can also do the trick.
  • Cinnamon Syrup: if you can’t find any cinnamon syrup, you can use simple syrup. For a different twist, grenadine or orgeat (almond syrup) are also interesting options to consider.
  • Angostura Bitters: If you can’t find any Angostura bottle, you can simply omit this step when making the recipe.

Making a Pitcher of Spiced Rum Punch:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of spiced rum, 12 oz of orange juice, 8 oz of pineapple juice, 6 oz of lime juice, 4 oz of cinnamon syrup and 16 dashes of Angostura bitters.
  • Mix: In a large pitcher, combine the spiced rum, juices, and bitters. Add ice and stir well.
  • Serve: Strain to remove the ice, serve immediately into ice-filled highball glasses and garnish with a pineapple wedge and/or a maraschino cherry. If you have some leftovers, be sure to keep it in the fridge (make sure no ice cubes are left inside) in an airtight container for up to 3 days.

Making it Non-Alcoholic:

  • Spiced Rum Substitute: Use a non-alcoholic spiced rum substitute; these are available in the market and do a good job mimicking the flavor of dark rum. Root beer can also be a good option. If you’re feeling crafty, you can also make your own dark rum substitute by infusing together rooibos tea and a bunch of spices of your liking (vanilla, cinnamon, clove, allspice and banana are always a good way to start). Mix all the ingredients together, add hot water, cover and let it infuse for at least 3h (the stronger the better, so if you have time let it infuse overnight. In that case, you can either let it rest in the fridge once the liquid has cooled down). Give it a taste, adjust the spice level if necessary and strain it once you’re happy with the result. Stored properly (in an airtight container in the fridge), this “tea-rum” can be kept for up to a week.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

The Spiced Rum Punch cocktail is naturally vegan as it doesn't contain any animal products. Most spirits, including spiced rum, are vegan-friendly. However, some brands may use animal products in their production process, especially if a filtration process is involved. Always check the brand's website or contact them directly to ensure their products are vegan.
If using a maraschino cherry for garnish, make sure to get vegan-friendly ones: some maraschino cherries are colored with cochineal (a type of insect), so look for brands that don't use animal products.
