Our straightforward Spiced Caribbean Mule recipe is just what you need to add warmth to your winter! With spiced rum, ginger beer, lime juice, and a touch of Angostura Bitters, it's the ideal cocktail for a chilly night.

- 2 oz Spiced Rum
- ½ oz fresh lime juice
- 1 dash of Angostura aromatic bitters
- 3 oz Ginger Beer - to top up
- Ice cubes
- Lime wedge - for garnish, optional
Add Bitters: Start by pouring 1 dash of Angostura aromatic bitters into the copper mug or highball glass.
Add Lime Juice: Squeeze and pour ½ oz fresh lime juice into the mug or glass.
Add Rum: Add 2 oz Spiced Rum to the mix.
Add Ice: Fill your copper mug or highball glass with a generous amount of ice cubes.
Top with Ginger Beer: Fill the glass with approx. 3 oz Ginger Beer (adjust to taste and to the size of the glass).
Stir Gently: Use a bar spoon to stir the ingredients gently.
Garnish: Place a lime wedge on top of the glass for garnish and serve immediately.
Substitutes:
- Spiced Rum: You can use any kind of dark of black rum to make this recipe if you don’t have spiced rum on hand. You can also infuse your rum with a few spices of your liking (cinnamon, cloves, allspice peppers, etc) for a few days to make your own spiced rum at home!
- Ginger Beer: If you're not fond of ginger beer's strong flavor, you can substitute it with ginger ale. It's sweeter and less spicy but still gives that ginger taste.
- Lime Juice: If you run out of limes, lemon juice works fine. It changes the taste slightly but still adds that necessary citrus note.
- Angostura Bitters: Any kind of citrus bitters will give this cocktail an interesting twist; feel free to experiment!
Making a Pitcher of Spiced Caribbean Mule:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of spiced rum, 4 oz of lime juice and 8 dashes of Angostura bitters.
- Mix: In a large pitcher, combine the rum, lime juice, and Angostura bitters. Stir well.
- Serve: Pour the mixture into ice-filled copper mugs or highball glasses and top up with chilled ginger beer. Garnish each glass with a lime wedge and serve immediately.
Making it Non-Alcoholic:
- Spiced Rum Substitute: Use a non-alcoholic rum substitute available in most supermarkets and do a good job mimicking rum's flavor. If you’re feeling crafty, you can also make your own spiced rum substitute by infusing together rooibos tea and a bunch of spices of your liking (vanilla, cinnamon, clove, allspice and banana are always a good way to start). Mix all the ingredients together, add hot water, cover and let it infuse for at least 3h (the stronger the better, so if you have time let it infuse overnight. In that case, you can either let it rest in the fridge once the liquid has cooled down). Give it a taste, adjust the spice level if necessary and strain it once you’re happy with the result. Stored properly (in an airtight container in the fridge), this “tea-rum” can be kept for up to a week.
- Angostura Bitters: You can add a drop of cinnamon and/or clove essence to your drink or substitute the sugar with cinnamon syrup to mimic the spicy kick of the bitters. Also note that a few dashes of bitter in an otherwise alcohol-free drink won’t raise the overall ABV of the drink. The drink will indeed chemically contain a drop of alcohol, but won’t make you intoxicated at all. Depending on your reason for not drinking alcohol and your degree of tolerance on the topic, you can choose to omit the bitters or to include them in your preparation.
- Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
This cocktail is already vegan-friendly as it doesn't contain any animal products. Just check the labels of your ingredients to ensure they're vegan, as some spiced rum brands may use honey or other animal-derived products in their recipes.
