Ingredients
 

  • 2 oz White Rum
  • 1 oz fresh lime juice
  • Club soda - to top
  • Ice cubes
  • Lime wedge - for garnish, optional

Equipment

  • Highball Glass
  • Measuring Jigger
  • Stirrer or Bar Spoon

Instructions

  • Prep Glass: Fill your highball glass with ice cubes.
  • Add Lime Juice: Pour 1 oz fresh lime juice into your highball glass.
  • Add Rum: Pour 2 oz White Rum.
  • Top with Club Soda: Fill the remainder of the glass with club soda, leaving about an inch from the top.
  • Stir Gently: Gently stir the ingredients with a bar spoon.
  • Garnish: Garnish with a lime wedge.

Notes

Substitutes:

  • White Rum: I sometimes use dark Rum for a richer, more robust flavor profile. Another interesting choice? Spiced Rum for a kick.
  • Lime Juice: If you run out of limes, lemons make a decent alternative, though they change the drink's character to be a bit zestier and brighter.

Making a Pitcher of Rum Rickey:

  • Scale: To prepare a pitcher serving 8, multiply all ingredients by 8. That's 16 oz of Rum and 8 oz of lime juice. Adjust the club soda to taste when serving.
  • Mix: In a large pitcher, combine the Rum and lime juice. When ready to serve, pour into individual ice-filled highball glasses, top up with club soda, and garnish.

Making it Non-Alcoholic:

  • Rum Substitute: There are several non-alcoholic rum alternatives available in the market. They capture the essence of Rum without the alcohol.
  • Proceed As Usual: Replace the Rum with the non-alcoholic substitute and follow the original steps. Enjoy a booze-free Rum Rickey.

Making it Vegan:

The standard Rum Rickey recipe is already vegan-friendly. However, always check the labels when buying any ingredients, especially if you're trying a new brand. Some alcohols might contain animal-derived ingredients or use animal products in their processing.
