Ingredients
 

  • 1 oz apricot eau-de-vie
  • ¾ oz lemon juice - freshly squeezed
  • ½ oz rich honey syrup - 2 parts honey, 1 part water
  • 2 dashes of Peychaud's bitters
  • Sparkling wine - chilled, to top
  • Ice cubes
  • Lemon twist - for garnish, optional

Equipment

  • Champagne Flute or Coupe Glass
  • Measuring Jigger
  • Strainer & Fine-strainer
  • Shaker
  • Stirrer or Bar Spoon

Instructions

  • Prep Glass: Fill your Champagne flute or coupe glass with ice cubes, stir and set it aside
  • Add Bitters: Add 2 dashes of Peychaud's bitters to a shaker.
  • Add Honey Syrup: Add ½ oz rich honey syrup to the mix.
  • Add Lemon Juice: Measure and pour ¾ oz lemon juice into the shaker.
  • Add Apricot Eau-de-Vie: Pour 1 oz apricot eau-de-vie into the mix.
  • Add Ice: Fill your shaker with ice cubes.
  • Shake: Shake vigorously for about 15 seconds.
  • Strain: Fine strain your mixture into the chilled flute glass.
  • Top with Sparkling Wine: Top off the mixture with chilled sparkling wine.
  • Garnish: Place a lemon twist into the glass for garnish.

Notes

Substitutes:

  • Apricot Eau-de-Vie: If you don't have Apricot Eau-de-Vie opt for another fruit brandy or use peach schnapps for a different but still fruity flavor.
  • Lemon Juice: Bottled lemon juice works in a pinch, but I always prefer fresh for that vibrant taste.
  • Rich Honey Syrup: You can substitute agave syrup if you want a vegan option or simple syrup if you prefer a more neutral sweetness.
  • Peychaud's Bitters: Angostura bitters can work as an alternative, although it will slightly change the flavor profile.

Making a Pitcher of Romancing The Stone:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 dashes of Peychaud’s bitters, 8 oz of apricot eau-de-vie, 6 oz of lemon juice, and 4 oz of rich honey syrup.
  • Mix: In a large pitcher, combine the apricot eau-de-vie, lemon juice, and rich honey syrup with ice. Stir well.
  • Serve: Strain the mixture into chilled individual Champagne flutes or coupe glasses, top with sparkling wine, garnish with a lemon twist, and serve immediately.

Making it Non-Alcoholic:

  • Apricot Eau-de-Vie Substitute: Use an apricot nectar or juice to mimic the fruity notes without alcohol.
  • Sparkling Wine Substitute: Opt for a non-alcoholic sparkling wine or club soda for that bubbly effect.
  • Proceed As Usual: Omit the bitters and use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.

Making it Vegan:

  • Honey Syrup Substitute: Replace the rich honey syrup with agave syrup to make this cocktail vegan-friendly.
