Our Rhubarb Spritz recipe is a refreshing treat! The fruity & sparkling blend of rhubarb and prosecco makes it the go-to cocktail for a warm spring day.

- 1 oz Rhubarb Liqueur
- 3 oz Prosecco
- 1 oz Soda Water - to top
- Ice cubes
- Orange slice - for garnish, optional
Prep Glass: Fill your wine glass with ice cubes and give it a quick stir.
Add Rhubarb: Pour 1 oz Rhubarb Liqueur or syrup over the ice.
Add Prosecco: Pour approx. 3 oz Prosecco over the ice or until the glass is ¾ full.
Add Soda Water: Add approx. 1 oz Soda Water to the mix.
Stir: Stir gently using a bar spoon.
Garnish: Garnish with an orange slice and serve immediately.
Substitutes:
- Rhubarb Liqueur: If you can't find rhubarb liqueur, you can use rhubarb syrup as a substitute. Alternatively, you can use strawberry syrup for a different but equally delicious flavor profile.
- Prosecco: Any sparkling wine will work in place of Prosecco. I've used Cava and Champagne before, and both were excellent.
- Soda Water: Any kind of sparkling mineral water can be used to make this recipe.
Making it Non-Alcoholic:
- Rhubarb Liqueur Substitute: Rhubarb syrup makes an excellent substitute; just make sure to adjust the quantity as syrups generally tend to be sweeter than liqueurs.
- Prosecco Substitute: Opt for a non-alcoholic sparkling white wine. .
- Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version of the Rhubarb Spritz.
Making it Vegan:
This cocktail is already vegan-friendly. Just make sure to use a vegan Prosecco or sparkling wine, as some brands use animal products during filtration.
