Substitutes:
- London Dry Gin: If you don't have London Dry Gin, you can use any other type of gin you prefer. I've also tried vodka as a substitute; it has a different but enjoyable flavor.
- Sweet Vermouth: If Sweet Vermouth isn't available, opt for any fortified wine. In a pinch, I've used red wine with a splash of simple syrup to mimic the sweetness and complexity.
- Dry Vermouth: If you're out of dry vermouth, try using white wine with a dash of bitters as an alternative.
- Fresh Pineapple Juice: Canned pineapple juice works fine if fresh isn't available, though fresh juice gives a brighter flavor.
Making a Pitcher of Queens Cocktail:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 8 oz of London Dry Gin, 4 oz of Sweet Vermouth, 4 oz of Dry Vermouth, and 8 oz of fresh pineapple juice.
- Mix: In a large pitcher, combine the gin, vermouths, and pineapple juice with ice. Stir well.
- Serve: Strain the mixture into chilled martini glasses, garnish with a pineapple slice and serve immediately.
Making it Non-Alcoholic:
- Gin Substitute: Use a non-alcoholic gin substitute; these are available and reasonably mimic gin's botanicals.
- Vermouth Substitute: For both types of vermouth, use non-alcoholic versions or mix grape juice with apple cider vinegar for acidity and complexity.
- Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
The standard recipe is already vegan-friendly since it uses plant-based ingredients like pineapple juice and botanical spirits. If you want to be extra cautious, just ensure that your vermouth brands are certified vegan.
