Ingredients
 

  • 1 oz crème de Noyaux
  • 1 oz white crème de cacao liqueur
  • 1 oz heavy cream
  • Ice cubes
  • Grated nutmeg or cherry - for garnish, optional

Equipment

  • Cocktail Shaker
  • Measuring Jigger
  • Strainer & Fine-strainer
  • Martini Glass

Instructions

  • Prep Glass: Chill your martini glass with some ice.
  • Add Cream: Add 1 oz heavy cream to the shaker.
  • Add Crème de Cacao: Measure and pour 1 oz white crème de cacao liqueur.
  • Add Crème de Noyaux: Pour 1 oz crème de Noyaux into the shaker.
  • Prep Shaker: Fill your cocktail shaker with ice cubes.
  • Shake Well: Secure the lid and shake vigorously until well chilled.
  • Strain and Serve: Fine strain the mixture into a martini glass.
  • Garnish: Top with grated nutmeg or a cherry for garnish.

Notes

Substitutes:

  • Crème de Noyaux: If you can't find Crème de Noyaux, I've used amaretto as a substitute. It offers a similar almond flavor, though slightly less sweet.
  • White Crème de Cacao: In place of white crème de cacao, regular crème de cacao works too. 
  • Heavy Cream: I sometimes use half-and-half or whole milk for a lighter option, though it changes the richness.

Making a Pitcher of Pink Squirrel:

  • Scale: To make a pitcher that serves 8, multiply all ingredients by 8. Use 8 oz each of Crème de Noyaux, white crème de cacao, and heavy cream.
  • Mix: In a large pitcher, combine all ingredients and whisk well, then add ice and stir.
  • Serve: Strain into individual chilled martini glasses and garnish as desired.

Making it Non-Alcoholic:

  • Crème de Noyaux Substitute: Use almond syrup or orgeat syrup to mimic the nutty flavor without alcohol.
  • Crème de Cacao Substitute: Opt for chocolate syrup to replace the crème de cacao's sweetness and flavor.
  • Proceed As Usual: Follow the original steps using these non-alcoholic substitutes.

Making it Vegan:

  • Heavy Cream Substitute: I use coconut cream or almond milk for a vegan version; they both provide a creamy texture without dairy.
  • Proceed As Usual: Replace heavy Cream with your chosen vegan alternative and follow the original steps.
