Prep Glass: Fill your highball glass with ice cubes.
Add Angostura Bitters: Drops 2 dashes of Angostura bitters over the ice.
Add Lime Juice: Pour ½ oz lime juice over the ice.
Add Spiced Rum: Measure and pour 2 oz Spiced Rum into the glass.
Add Ginger Beer: Top up with approx. 4 oz Ginger Beer, adjusting to taste and to the size of the glass.
Stir: Stir gently with a bar spoon.
Garnish: Place a lime wedge into the glass for garnish and serve immediately.
Substitutes:
- Spiced Rum: If you don't have spiced rum, you can use dark rum for a different flavor profile. I've also tried using light rum, which makes the drink a bit lighter but still delicious.
- Ginger Beer: If ginger beer is too strong, try ginger ale for a milder flavor. It's less spicy but still gives that ginger kick.
- Lime Juice: Fresh lime juice is best, but bottled lime juice works in a pinch. You can also use lemon juice with a slightly different citrus note.
Making a Pitcher of Perfect Storm Cocktail:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 dashes of Angostura Bitters, 16 oz of dark rum, 32 oz of ginger beer, and 4 oz of lime juice.
- Mix: Combine the bitters, dark rum, ginger beer, and lime juice in a large pitcher and stir well.
- Serve: Pour the mixture into ice-filled highball glasses, garnish with a lime wedge or slice, and serve immediately.
Making it Non-Alcoholic:
- Rum Substitute: Use a non-alcoholic rum substitute; these are available and reasonably mimic rum's flavor.
- Proceed As Usual: Use this non-alcoholic substitute instead of dark rum, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
- Ensure Ingredients Are Vegan: Most dark rums and ginger beers are vegan, but always check labels.
