Substitutes:
- Vodka: If you're out of vodka, you can use white rum for a slightly different flavor profile. I've also used tequila for a more Mexican-inspired version.
- Pineapple Juice: If you don't have pineapple juice, orange juice can work as a substitute, although it will change the taste slightly.
- Cranberry Juice: In a pinch, pomegranate juice can replace cranberry juice, adding a slightly different tartness to the cocktail.
Making a Pitcher of Palm Springs Cocktail:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 16 oz of vodka, 32 oz of pineapple juice, 4 oz of lime juice, and 8 oz of cranberry juice.
- Mix: In a large pitcher, combine the vodka, pineapple, lime and cranberry juice. Stir well.
- Serve: Pour the mixture into individual ice-filled highball glasses, garnish and serve immediately.
Making it Non-Alcoholic:
- Vodka Substitute: Use a non-alcoholic vodka substitute; these are available and reasonably mimic vodka's clean taste.
- Proceed As Usual: Use this non-alcoholic substitute instead of the regular vodka, follow the original steps, and enjoy a non-alcoholic version.
Making it Vegan:
Good news! The Palm Springs cocktail is naturally vegan. Just make sure to use a vegan-friendly vodka brand, as some brands use animal products in their filtration process.
