Warm up with the Necromancer cocktail recipe! Mix absinthe, Gin, Lillet, elderflower liqueur, and lemon juice for a sophisticated drink.

- 1 dash Gin
- ¾ oz Lillet Blanc
- ¾ oz Elderflower Liqueur
- ¾ oz fresh lemon juice
- Ice cubes

Prep Glass: Fill your coupe glass with ice, give it a good stir and set aside.
Add Gin: Drop 1 dash Gin into the shaker
Add Lemon Juice: Measure and pour ¾ oz fresh lemon juice into the shaker
Add Elderflower Liqueur: Add ¾ oz Elderflower Liqueur to the mix.
Add Lillet Blanc: Measure and pour ¾ oz Lillet Blanc into the shaker.
Pour Absinthe: Add ¾ oz Absinthe to the mix.
Add Ice: Fill your cocktail shaker with ice.
Shake: Shake vigorously for about 15 seconds.
Empty Glass: Remove the ice from the coupe glass.
Strain: Fine strain your mixture into your chilled coupe glass
Garnish: Add a lemon twist for garnish.
Substitutes:
- Absinthe: If you don't have absinthe, try using Pernod or another anise-flavored liqueur. I've also used pastis in a pinch; it's slightly sweeter but works well.
- Gin: You can substitute Gin with vodka for a cleaner taste, though it will lack the botanical complexity.
- Lillet Blanc: If you are out of Lillet, dry vermouth will work perfectly fine for this mix.
- Elderflower Liqueur: St-Germain is my go-to, but if you don't have it, try using a floral syrup like lavender or rose mixed with a bit of simple syrup.
- Lemon Juice: Fresh is best, but bottled lemon juice works in a pinch.
Making a Pitcher of Necromancer:
- Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 6 oz of absinthe, 8 drops of Gin, 6 oz of Lillet Blanc, 6 oz of elderflower liqueur, and 6 oz of fresh lemon juice.
- Mix: In a large pitcher, combine the absinthe, Gin, Lillet, elderflower liqueur, and fresh lemon juice with ice. Stir well.
- Serve: Strain the mixture into chilled coupe glasses and garnish with lemon twists.
Making it Non-Alcoholic:
- Absinthe Substitute: Use an anise-flavored non-alcoholic spirit or make an anise syrup by boiling water with star anise and sugar.
- Gin Substitute: Opt for a non-alcoholic gin alternative; these are available and mimic Gin's botanicals quite well.
- Lillet Blanc Substitute: Use non-alcoholic white wine with a dash of bitters or grape juice with a splash of apple cider vinegar.
- Elderflower Liqueur Substitute: Use elderflower syrup or cordial instead of the liqueur.
- Proceed As Usual: Follow the original steps using these non-alcoholic substitutes to enjoy a non-alcoholic version.
