Ingredients
 

  • 1 oz Irish Whiskey
  • 1 oz sweet peach Schnapps
  • 1 oz lime juice
  • 2 oz pineapple juice
  • Soda water - to top off
  • Green food coloring - a few drops, optional
  • Ice cubes
  • Lime wedge or mint sprig - for garnish, optional

Equipment

  • Highball Glass
  • Measuring Jigger
  • Stirrer or Bar Spoon

Instructions

  • Prep Glass: Fill your highball glass with ice cubes.
  • Add Juices: Add 1 oz lime juice and 2 oz pineapple juice to the glass.
  • Add Schnapps: Measure and pour 1 oz sweet peach Schnapps into the mix.
  • Add Whiskey: Pour 1 oz Irish Whiskey over the ice.
  • Top with Soda: Top off with soda water to your taste.
  • Color and Stir: Add a few drops of green food coloring and stir gently with a bar spoon.
  • Garnish: Place a lime wedge or mint sprig into the glass for garnish.

Notes

Substitutes:

  • Irish Whiskey: If you don't have Irish Whiskey, try using bourbon for a slightly sweeter flavor. I've also used rye whiskey for a spicier kick.
  • Sweet Peach Schnapps: You can substitute with apricot brandy if you're out of peach schnapps; it adds a different fruity note but works well.
  • Lime Juice: Fresh lemon juice can replace lime juice in a pinch, though it will alter the citrus profile slightly.

Making a Pitcher of Luck of the Irish Cocktail:

  • Scale: To make a pitcher that serves 8, multiply all the ingredients by 8. That would be 8 oz of Irish Whiskey, 8 oz of sweet peach schnapps, 8 oz of lime juice, and 16 oz of pineapple juice.
  • Mix: In a large pitcher, combine the Whiskey, schnapps, lime juice, and pineapple juice. Stir well.
  • Serve: Pour the mixture into individual ice-filled highball glasses, top with soda water, add green food coloring, give it a quick stir, garnish with lime wedges or mint sprigs, and serve immediately.

Making it Non-Alcoholic:

  • Whiskey Substitute: Use a non-alcoholic whiskey alternative; these are available and mimic the flavor profile quite well.
  • Schnapps Substitute: Opt for peach nectar or syrup to maintain the sweetness without alcohol.
  • Proceed As Usual: Use these non-alcoholic substitutes instead of the regular ingredients, follow the original steps, and enjoy a non-alcoholic version.
